As for the wine, the rule of thumb is to never cook with wine you wouldn't drink. Any good red table wine can be used.

Either really, usually boiling is better as it's quicker. I don't think there is a best kind of red wine to use but it's worth remembering that if you wouldn't drink it don't cook with it. I often find I need a reduction by 1/2 rather than 1/3.

You can use any Red Wine it does not have to be expensive. You have to bring the sauce to the boil and then simmer until the sauce reduces.

Boil it hard to evaporate it, thus reducing it by 1/3. It intensifies the flavour. But worry not about wine. When the alcohol is cooked it will automatically evaporate and you are just left with the wine flavour.

You have to boil it but don't use too high of a temp. Any dry red wine should work. You can also buy cooking wine made especially for that purpose.
