Hello there! Your eye color is determined by the distribution and amount of pigment (melanin) on the iris fibers of your eye. If the iris has pigment on the back and front surface then the incident light reflected off of your iris is brown. When there is little or no pigment on the front surface of the iris The light interacts with the gray iris fibers and reflects as blue.
The size and spacing of the fibers and stromal cells determines the "blueness" or "greenness' of the reflected light. When people have less pigment on the back surface of their iris it allows light to reflect back from the retina which appears as red. The red color interacts with the blues and browns to create aqua and violet iris colors.

So basically eye color is determined by the amount and distribution of melanin in your iris!

Different color eyes come from the make up of proteins in the body. They are apart of human adaptation. For example, peoples that are from northern Europe (vikings, Icelanders, etc.) have blue eyes because they are practically immune to snow blindness. It is the same with skin color, the people of northern Europe are usually fare skinned and will burn very easily while people with darker skin are more protected from the sun.

Our ancestors simply adapted to where they lived. This process is slow and has been made slower by the fact that people move more(think in terms of generations). You probably don't live in the same region as your great grandparents but before the 1600's people very rarely moved because they were tied to the land they worked.

eye color is determined genetically, brown eyes being dominant genes and blue being recessive genes and all colors in between being a combination of dominant or recessive expressions.
