Over time, the water breaks down the plastic and causes toxins to leak into the water. Plastic doesn't last forever.

It's mostly because there are states that require *all* food products to bear sell-by dates, and it's easier for the companies making the product to just stamp everything with a date instead of just the stuff sent The water in the bottle won't go bad, the chance of it having any bacteria in it is very slim indeed (and if it does you'll hear about it on the news long before that expiration date). The water might taste a little musty if it's been in the bottle for years (mostly due to the packaging itself) but should still be safe to drink. Once the bottle has been opened, drink it within a week or two.

Why are you buying bottled water ? it only has to be tested by law "ONCE". Municiple supply must be checked 24/7, and samples are taken randomly by the board of health. Just because, there is a pretty picture of a waterfall on the bottle, does NOT mean that "Point Source", looks like that, it could be an old well down by the ship yard for all you know, remember, they found "BENZINE" in "Perrier".

A couple of reasons, actually. The bottle can cause the water to have a different taste, the package deteriorating in general, and small pathogens that survived in the water may further reproduce. It's not the actual water that will expire, though.

Some contamination may be possible during the bottling. Once bottled, the oxygen levels in the water start dropping and that may encourage some bacteria to grow etc.

The plastic used in some bottled waters can "leech," or begin to deteriorate into the water. I think this is the case with thinner plastics... and definitely if it's been left out in the sun or hot ....
