Zucchini is a small summer squash that looks like cucumber. One difference between the two is that cucumber is generally eaten raw and zucchini is generally cooked.
This is what it looks like:

Zucchini. Some people think it's a vegetable, but it's not. It's actually a fruit. There are several types but the most common one looks like a cucumber (Another fruit, not Vegetable). It's easy to cook. You don't need to peel the skin off either. You can chop it up either small or just chop it up coarsely. Sauté it in olive oil, salt and pepper. Easy.... For ratatouille, it is the main ingredient. It's traditionally chopped up in little cubes for that, but in the movie the rat sliced it in coins.

Zucchini is equivalent to a squash, and you would cook it like such. Slice thin and fry, or add to salad. I personally don't like zucchini (or most cooked vegetables - so you can put this in perspective) but it seems to be best either cubed in a salad (little 1/4 inch cubes) or sliced thin and cooked in olive oil and salt and pepper.
You can do other stuff with it too - put it in bread, whatever.

It's a squash, and it's dark green (looks sort of like a cucumber with little whitish/yellow marks on it, but darker in color). It's located in your local grocery store's produce section, probably near the other varieties of squash and bell peppers.
