Yes, Adam and Eve's children must have had sex with each other - incest.
The first law *that we know of* forbidding incest in the bible is the Law of Moses. Therefore, Adam's children marrying each other, Noah's grandchildren marrying each other, Abraham marrying his half-sister, Lot having sex with his daughters, Isaac marrying his cousin, etc. etc. can all be considered incest, but occurring *before* a law against incest existed.
Most laws that I know of consider sexual relations incest only when occurring between 1st cousins or closer. This is basically what is described in the biblical OT as well. In other words, it is not (by law) considered incest to have intercourse with your second cousin. Certainly, it is not considered incest to have intercourse with someone just because they are descended from Adam.
Biblical incest after the Mosaic Law: the only case I can recall is David's son, with his half-sister. He raped her and was informed (by her) that if he asked for her hand in marriage he would be granted it, despite the Mosaic Law.
P.S. - incest does *not* inevitably lead to birth defects. If we assume that neither Adam nor Eve had any genetic predisposition for birth defects, then it would have been several generations before genetic variation led to two people with a "defect" gene producing children.

How could that be incest? Adam and Eve were not brother and sister. Yes Eve was created from 1 of Adams ribs but nothing has ever said about them being brother and sister and anyway God would not do such a thing.

It's questions like these that make me sure that there is no such thing as God. If Adam and Eve's kid's had sex with each other and had more kids, those kids would be disabled, just like it would be now if someone did that. If that is in fact what actually happened, wouldn't every single person in the world be disabled?

No. Mitochondrial Eve's offspring had intercourse with the final inhabitants as common yet basically her descendants survived extinction. something of them went into oblivion hundreds of thousands of years down the line. And we could keep in mind that Mitochondrial Eve got here first - accompanied via Y Chromosome Adam 60,000 years later. the two by no skill met.

Well, first of all, that's only if you take the bible literally. But if I did I guess I would say it's like when you get cats. You get two cats, let's say. They are yours and they procreate. They are like brothers in that they are both raised by you, but it's not incest, because it's just not, let's say. But, let's not say cuz Adam and Eve is an allegory about creation not to be taken literally, lest we get caught up worrying about things like this.

no, because God did not make adam and eve sexually like he did Jesus....therefore they aren't incest....
Now adam and eve's grandchildren are inces, and so on for a few more generations, but then the blood line is far enough along to be so different, that it was ok.

Incest was not forbidden until the Levitical Laws were handed down.
Adam and Eve had many sons and daughters, but only three of the sons were germane to the story, Cain, Abel, and Seth.

God did not impute a law against incest before Moses brought the law. They were more pure back then, genetically speaking.

No, it wouldnt be wierd, because their DNA was perfect and unflawed, therefore their children were unflawed and there were no worries of genetic mutations or handicaps.
