I'm not a Christian, but the book you're referring to is my book. Genesis is not a scientific explanation of creation. If God had provided a scientific explanation, no one of that day would have understood any more than anyone of today would understand!
Genesis is a foreword to the Instruction book God provided for His people. There are many lessons to be learned from those instructions whether you believe they are literal or figurative. God created order from chaos. Can you think of a better way to describe how He did it?
Knowledge and wisdom must come slowly and with experience -- NOT from eating an apple off a tree. Have patience. You will learn. Perhaps one day you'll experience the excitement of learning.
The Tanakh ("Old" Testament) is about the relationship between God and His people, Israel. It is about Life, here on earth, and how to live together in peace. Why is it that no one is interested in that message? Why the obsession with the afterlife when there is so much suffering and misery here in this life?

In Genesis one, the word for "God" is actually the Jewish word "Elohim" which is a plural word. (There are masculine, feminine and plural words in Judaism, like in other non-English languages) If you read Gen1 you see the plural being used. "WE created them male and female in OUR image and likeness. However the Jewish/Christian/Muslim pantheon have no females! So how did "they" create in "our" image, male and FEMALE. Simple. These were the "old gods and goddess" who created the universe. And the creation was written as a story, not an exact scientific fact, as they understood the universe. Gen 1 is not a literal, orderly story of creation, but a general concept.
Now in Genesis 2, the word for "God" is Jehovah, the god of the Jews, Christians and Muslims, and HE made man from the dust of the earth and then created woman. And if you read up on Jewish Mythology, there is even more. Read the Lost Books of the Bible / The dead see scrolls.
And I believe this story is part of the Pentateuch, the Five Books written by Moses. So it is a fable, a bardic tale written down long after the event.
As far as Jehovah speaking, That is how he creates, by speaking it into being. its a "So it is spoken, so shall it be done" kinda thing. Again, the "speaking" is symbolic of creating, its not a literal speech

Humans wrote the Bible. God may not have physically said it in the same sense that humans communicate to one another.
Why do athiests only pick on Christians and not muslims, buddists, evolutionists, etc? Is it because they think Christianity is boring?

vicsikix has it right. God was talking to himself. He said US. He included reference to himself. Many Bible scholars consider early Genesis (as you mentioned) as the first reference to a trinity, or triune God. Father, Son, and Holy Spirit.
And He isn't just my God. He is The God. King of Kings and Lord of Lords, and he can be your God too.

God had to be speaking to his first creation
please refer to Proverbs ch 8: 22-31 this must be referring to His son - Jesus while he was in heaven before his birth on earth

Gen 1:26 And God said, Let us make man in our image, after our likeness: and let them have dominion over the fish of the sea, and over the fowl of the air, and over the cattle, and over all the earth, and over every creeping thing that creepeth upon the earth.
Gen 1:27 So God created man in his [own] image, in the image of God created he him; male and female created he them.
The US in there is more then one.
To directly answer your question: GOD was speaking to all creation.

I'm not christian, but my book has those parts too.
God was figuratively commanding existance to form and act as he willed.
in a "practical" sense "god" wouldn't have been *actually* talking(nor really be able to talk as we know it, as God is not a distinct form as we think of it) but rather merely willing such.
