God set down what the sacrifice would be. Since it was in the similitude of Christ...the symbolism was important. Instead of humbling himself, Cain told God that He had to accept Cains gift. Cain decided he knew more than God. Cain refused to humble himself enough to learn and understand the symbolism that was presented for the sacrifice. Cain didn't care about the WHY of the situation...only the inconvience. He was prideful, and we saw how that turned out.

Cain's offering was unacceptable to God because it was not an act of saving faith. He believed that God existed, and had come to worship Him. But Cain had the wrong offering, the wrong attitude, and the wrong motive. Cain did not do the will of God; he acted according to his own will. A form of godliness but denying its power.

Able gave his firstling. Cain gave off the ground.

God showed favor to Able (fire came down from heaven?).

Cain got jealous. God told Cain he didn't give excellently. Cain didn't give the yummy fruit. Just the left overs. (He didn't give his tithe, firstfruits).

See? Able gave His firstling (a firstfruit, tithe).

Cain brought it to God for his own reasons. In other words he really WAS NOT bringing it to God for His glory. He, God, can see where our hearts are. He knows you better than you even know yourself. He loves you more than you can even imagine! I pray that you will allow Him to take you to your highest potential. He is the ONLY person ALWAYS here for ya! 24/7/365/ ETERNITY! I love ya and God bless!

I think the answer lies in the fact that God, as our creator, can see to the deepest parts of our heart and judge if our motives are pure. My perspective is that God already knew that Cain's offering was not being offered with a spirit of thankfulness.
