FRIED EGGPLANT

1 tsp. turmeric powder
1 tsp. minced garlic
1 tsp. red chili
1 tsp. salt
1 lg. eggplant
3/4 c. oil to fry

Slice the eggplant in thin slices. Mix the other ingredients together except oil. Mix the ingredients with eggplant slices and fry them 5 or 6 slices at a time. Sliced eggplants can be served as side dish.

absolutely some recommend soaking slices of eggplant in salt water for a while to destarch before cooking

my husband is allergic to eggs so I dip my eggplant in water then in my crumb mixture and fry away.

eggplant is not an egg. Use pam or some other nonstick thing and fry away

Google "Aubergine" and "egg-plant Parmigiana".... Quite delicious.
I've never tried it with eggs, ..!! But there's always a first time I s'pose?

yes but you need to use some kind of frying oil or butter so it wont burn...enjoy

having done it many times,

olive oil works the best. and it's the healthiest and tastiest.

after that comes canola oil.

then butter/lard(even though they're unhealthy)

then lastly spray oil.(pam, etc)

anything else just ask..... haha
