Beef Stew

This beef stew is slowly simmered with carrots, potatoes, and celery in a rich red wine sauce.

Ingredients:

* 1 pound lean stew beef
* 1 pound baby carrots
* 4 medium red potatoes, diced
* 4 stalks celery, diced
* 1 onion, peeled and diced
* 1 10.75-ounce can reduced-fat tomato soup
* 1 cup red wine or cooking wine
* 4 cloves garlic, peeled and minced
* 1 bay leaf
* 4 whole cloves
* Salt and black pepper to taste
1 (10-ounce) package frozen peas

Method

Place all ingredients except peas in a slow cooker. Cover and cook on low for 8 to 10 hours. Stir in peas. Remove bay leaf and cloves before serving.

------------------------Crock-Pot Stuffed Peppers

These beef and cheese-stuffed peppers are cooked in the slow cooker. Use purchased rice and vermicelli mix to speed things up.

Ingredients:

* 6 green sweet peppers
* 1/2 medium onion
* 1 pound lean ground beef
* 1 package chicken flavored rice and vermicelli mix (Rice-a-Roni)
* 1 cup frozen corn
* 1 1/2 teaspoons Worcestershire sauce
* 1 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1 cup shredded mozzarella cheese (low moisture, part skim) (4 ounces)
* Nonstick cooking spray
1 8-oz can tomato sauce

Method

Wash green peppers and cut tops off. Clean out seeds from inside of peppers. Chop the tops of the peppers and set aside. Chop the onion. Saute ground beef in skillet until lightly brown. Drain off grease. Add beef back to skillet and saute with chopped onions and chopped pepper tops until peppers start to soften. In medium bowl, add Rice-a-Roni, beef mixture, corn, Worcestershire sauce, salt, pepper, and cheese. Mix well. Scoop mixture evenly into the six peppers. Lightly coat the inside of the crock pot with cooking spray for easy cleanup. Place the filled peppers in the slow cooker. Pour the tomato sauce evenly over the peppers. Cook for 6 to 8 hours on low-heat setting or 3 to 4 hours on high-heat setting.

--------------------Homemade Chicken and Noodles

Serve this classic dish with homemade noodles atop mashed potatoes for a hearty dinner.

Ingredients:

* One Whole Chicken
* A half of bag of flour
* 4 eggs
* One can of chicken broth (optional will give more flavor)
*
* You will also need:
* Pam
Rolling pin.

Method

First boil the chicken in a large pan until thoroughly cooked (best to do it when you get up that way you have plenty of time). In the mean time, mix eggs together and then mix in flour. Keep adding flour until mix is thick. Then coat the outside with flour to make picking it up less messy. At this point spay your counter or a large cutting board with Pam and spread flour over pan (this makes for an easier clean up and you mix spreads better). Place mix on top of the flour. Then spray and flour your rolling pin. Roll the mix out so it is flat. Use flour if needed. After mix is flat, spread flour all over top and start cutting the rolled mix across. Then peel the pieces apart and lay the noodles out and let them dry. After chicken is completely cooked, place in a different bowl and remove meat from bone. Place both chicken and noodles into slow cooker. If desired, add canned broth in slow cooker also and let cook until the noodles are nice and tender. You can put your slow cooker on high or low depending on whatever time you think you shall need the soup.

Notes: This dish goes great on top of mashed potatoes.

-----------------------Easy, Meaty Chili

Lean ground beef plus canned chili beans, tomato paste, and tomatoes with green chilies combine to make this easy chili that can be done in a crock pot.

Ingredients:

* 1 lb. ground sirloin or lean ground beef
* 1 regular can Bush's brand mild chili beans
* 1 regular can Bush's brand hot chili beans
* 1 can Rotel brand diced tomatoes with green chilies
* 1 small can (6 oz.) tomato paste
* 1/4 cup catsup
* 2 cups water
* 1/2 tsp. crushed red pepper
* 1/4 tsp. paprika
* 3 chopped cloves garlic
* 1 cup shredded cheddar cheese, divided in two portions

Method

Cook meat in skillet just so it is no longer pink. Drain. Add meat and all other ingredients, except the 1/2 cup of cheese, to either a crock pot or a kettle. In crock pot, this can cook all day on low or 2 hours on high. In kettle, cook about 1 hour on low heat, stirring occasionally. Use remaining cheese to sprinkle on top of individual chili bowls.

Notes: Substitute one pound ground turkey, pork, sausage, or diced raw chicken breast for a change in taste.

crockpot ribs: I buy whatever cut of pork ribs are on sale, most any cut works great with this. Cut ribs into individual riblets and brown on each side on stove top, until just golden on the outside. Toss the ribs into your crockpot along with- 1 can of Coca Cola, 1/4 cup brown sugar, 1 TBSP Soya sauce, 1 TBSP Warchester sauce, 1/2 tsp dried thyme, 1/2 tsp black pepper, 1 tsp garlic powder, 1 tsp white vinegar. Turn crockpot onto low and cook for at least 4 hours, and up to all day, tossing the ribs around several times to cook evenly. Personally I don't eat ribs, but my hubby does and him, as well as everyone who I have made these for says they are to die for. They fall right off the bone and you can tell they are extrememly tender because I cut them up for my young son and they fall right apart. The coke might sound like an odd ingredient but somehow it works!

Get a Pork Roast. In the bottom of the slow cooker put a layer of think slices of onions and apples sprinkle with a small amount of nutmeg. Then put in Beringers Pinot Grigio. About an inch worth.

On the pork crush a few garlic cloves, sprinkle a little rosemary, and shake a generous amount of thyme. Yum! Cook on low for 6 hours or high for 3.

Do not eat the apples and onions, but serve with apples sauce.
