My mother used to cut them thinly, add a little onion, and some pepper. And fry them until tender in butter. (And I wonder where I get my high cholesterol from. :)

Obviously, the smaller the potatoes are cut, the quicker they will cook, but care is to be taken not to cut them up so finely that they become mash again.
Now go cut the potatoes up in little squares. Not too small.
Fry them in a pan with cooking oil until nearly cooked and crisp. Add some sliced raw onion.
Stir well.
Enjoy when onions are glassy, not burnt.

Make baked potatoes. Then put them in the fridge until they've cooled. Dice 'em up. Fry them up in a pan with the butter, and onion and garlic and pepper if you have it. It's basically potatoes o'brien.

you can wash and leave the skin's on use bacon grease or oil let it get hot slowly add potatoe's (try to get water off so they won't spatter) then use lid to soften then add onion or green pepper's etc so they won't be over cooked then take lid off when soft to brown lay out paper towel on cookie sheet put potatoes on it to drain grease can also add a little butter when browning at the last few minutes

Slice them up in different sizes. throw them in a cast iron skillet about 1/3 full of bacon grease, fry them over high heat until they start browning then turn them down to medium and let them fry, keeping them stirred to keep them from sticking. As they get brown turn them down until you get them the way you like them. Warning this bacon grease thing is optional. Mostly for those of us who are born and raised in the South. My son-in-law from the North likes his in Vegetable Oil, Not Me.
