Steak Salad


Steak salad is one of my favorite things to make with leftover steak. At a minimum it is simply slices of steak over salad greens with your preferred salad dressing. I tend to spiff mine up a bit with whatever we might have on hand - walnuts, goat cheese, pomegranate seeds, kumquats, etc. Arugula is a particularly good complement to steak, though the pepperiness of the arugula can at times be a little too much if not mixed in with some other salad greens.

1/4 head lettuce greens
1 handful of arugula, young leaves, tough stems removed
1/4 of one red bell pepper, thinly sliced and chopped
2 scallions, thinly sliced
A few toasted walnuts, chopped
1/4 to 1/2 lb of steak, pan-fried or grilled, chilled, and thinly sliced
2 oz goat cheese, crumbled
2 kumquats, thinly sliced

1 teas lemon juice
1 Tbsp olive oil
Salt and Pepper

1 Toss together the lettuce greens, arugula, bell pepper, and scallions. Arrange on individual plates. Sprinkle on chopped walnuts. Lay on top several slices of chilled sliced steak. Sprinkle on goat cheese and kumquats.

2 Mix together the lemon juice, olive oil, and a dash of salt and pepper. Drizzle on salad.

Serves 2-3.

Since I usually buy my steaks 3/4 to 1 inch thick, I slice them in half, heightwise. I take some butter and a few thick slices of onion and start them sauteeing. I lay the steak on top of the onion, cover the pan and let the steak heat through. This way the steak doesn't get well-done and tough, it just kind of steams and stays tender. You can use the onions on your sandwich if you like them, but the steak doesn't really pick up much onion flavor (in case you don't like onions). Makes a great sandwich on french bread or a steak roll, etc.

I agree with the salad. I had the most awesome Steak Caesar Salad at a restaurant in Benicia. I don't even care for steak but it was incredible.

spedino sandwiches are great for leftover steak.... i usually slice the steak thin across the grain and saute it with some yellow and red bell peppers and some sliced onions. toast your bread (i usually use ciabatta) place the meat, peppers and onions on one side, top with some swiss cheese and youre done.

Slice it up, add barbecue sauce to it, put it on a roll and have a nice steak sandwich.

Toast a baguette, slice the meat on it, cover with cheese, melt under the grill, add fried onions. Yum.

Slice it thin and put on top of a spinach leave salad. Try it with balsamic vinigatette and whatever you like on a salad.
