Say I open a jar of Ragu, use some, and put it back in the refridgerator. How long is the sauce good for?

Depends on how it is kept and the salt content. If your fridge is very cold, possibly two weeks.

You ought to use it up within a few day's time, but I suppose technically if kept properly refridgerated, one could almost use it until the printed date. I'd recommend using it up as soon as you can, though; when the sauce starts sticking to the tin or glass of the container, you'll know you've kept it too long. Check the label to see what the manufacterer recommends. Food additives and/or preservatives usually allow pasta sauce to keep longer than more natural or organic variations. No matter what, though, keep it refridgerated!

I would say to read the lable but best of all use common since like by smell or look
