Bacon is made from the belly fat called side pork. It is then smoked. In beef they usually call this cut short ribs, from the short plate, and leave the bone in so that they can be simmered. In birds, this is not possible because they have very little meat and fat in that area.

Actually have you ever heard of Beefcon look it up it is a beef equivalent to bacon. But I think the reason why you dont see similar cuts from other animals is cause they arent as fat as a pig. Bacon has a majority of fat with little pieces of meat. As for the Beefcon it sucked not very good and very salty.

Bacon is defined as any of certain cuts of meat taken from the sides, belly or back of a pig that may be cured and/or smoked. Meat from other animals may also be cured or otherwise prepared to resemble bacon, such as chicken or turkey bacon.
For more info on bacon (pork, turkey, or otherwise), please read here:

Hope this helps a bit!

There's also turkey bacon. I think if there was beef bacon, it would be too tough - probably be more like beef jerky.
