I made some peel and eat style shrimp to munch on yesterday for the fourth. I bought some Zatarans shrimp and crab boil and followed the instructions for shrimp. I was supposed to boil for one minute then kill the heat and let it sit for about 20. I didn't let it sit because the test shrimp I took out was already tough after about 5 minutes. Can I get some suggestions as to how to avoid them getting tough for next time? They were a huge hit, and I'm going to make them again.

high heat less time. shrimp only takes about 1-2 minutes to cook. go to www.foodnetwork.com for more tips.

Do not over cook them. Shrimp are very delicate and need very little heat to cook to perfection. Always have some rapid boiling water and put your shrimp in. Let them ALL turn pink and then give them a minute more or two. You can always test them for doneness. Remove from the water and put in cold water to stop the cooking process. You can prepare a large bowl with water and ice cubes for next time.

prep your shrimp & then have some boiling water add some salt & lemon to the water and then blanch the shrimp for a minute or two, then fish them out and dump them quickly into a bowl with ice cold water to stop the cooking process, then store cold until ready to eat

I live in an area with lots of fresh shrimp. Shrimp should be boiled only until they turn a bright coral pink color. That's it. Any longer and you'll have trouble peeling them, and (as you found out) they'll be tough.

You should take them off the heat and into the serving plate as soon as they change color... that is indication enough that they're done...
Otherwise they would be rubbery and tough...

flash them in the boiling water for two minutes or until they are not translucent in the middle...now shock them in ice water!!
they will be awesome!
