Hi all! I have never cooked a large salmon steak. I will bake in the oven. It is frozen. Can someone offer a simple recipe and directions please?

SALMON STEAK

Al found this recipe when he & Cathy were living in Phoenix. This recipe has two things that Al & Cathy love: Salmon and barbecueing. Al has added garlic and capers to the original recipe A quick and easy way to cook the perfect Salmon. By the way, it also works with other firm fish.
1 Salmon Steak, ¾"-1" thick
2 Garlic cloves, minced
1 tsp. Ginger, fresh grated
1 tsp. Capers
1-2 Rosemary, fresh sprigs
1-2 Fennel, fresh sprigs
1-2 Shallots, fresh
2 slices Lemon
1 tsp. Dry white wine
½ tsp. Lemon Juice
salt & pepper to taste

Place salmon steak on sheet of aluminum foil (be sure it is large enough to wrap and seal the steak). Rub and coat salmon with the minced garlic and grated ginger. Add salt and pepper. Sprinkle on capers and lay the lemon slices, rosemary, fennel and shallots on top of the salmon. Pour on the wine and lemon juice. If you like it spicy, sprinkle a little tabasco sauce onto the salmon. Seal the salmon steak in the foil. Place foil on hot barbecue grill and cook for 12 minutes. Alternately, you can place the foil in an oven at 350° F for 12 minutes. When done, open foil and discard rosemary, fennel and shallots. Split salmon and serve over wild rice. Garnish with fresh parsley.

In a covered casserole dish place the salmon. Drizzle each with a little olive oil or a dollop of butter/marg. Season lightly with pepper and seasoning salt. On each steak place a sprig of fresh dill (or sprinkle with dry dill or Italian seasoning), a sliced onion ring, and a slice of lemon. Add about 1/4 cup of some water, stock, or white wine and bake a 425 degrees F for about 15 to 25 minutes, or until fish flakes.

The onion and lemon are just for flavor. Discard when done.

Please make sure that the salmon is fully defrosted before you begin cooking. You can accelerate defrosting by putting it in a bowl of water. (Still in a plastic bag)
When ready, season the salmon with pepper, sage and lemon. Hold the salt for a bit afterwards.
Heat a bit of olive oil in a pan and let it come to the smoking point. Place the salmon on the pan and for God's sake DO NOT MOVE IT! It is important that the fish sears on one side. You can sprinkle it with some salt at this point.
After about 4 minutes, (You can see the doneness), place the pan in the oven for about 10 minutes at 350 degrees
Serve seared side up, with some thin slices of cucumber doused with oilve oil, lemon and salt and pepper

Simply Pesto Salmon


Ingredients
1 lb. salmon fillet
Prepared Dried Tomato & Garlic Pesto Mix
Grated Parmesan cheese

Directions
Arrange salmon fillets in greased baking pan; top with a generous layer of prepared Dried Tomato & Garlic Pesto Mix. Sprinkle with Parmesan cheese. Bake at 350° for 20 minutes or until fish flakes when tested with a fork. Makes 2-4 servings.

I cook the salmon on the stove. In a large fry pan put defrosted salmon in hot pan. Add olive oil to coat bottom of pan. Sliced yellow onions, fresh chopped garlic, white wine and Lawyers garlic salt. Put all ingredients in pan on top and sides of the fish. Cover with lid. Turn down the stove to a simmer. Let cook for about 10-15 minutes. Flip the salmon and simmer again covered.
Serve with brown rice and a fresh vegetable.

Defrost your salmon steak first. Sprinkle it with kosher salt and fresh ground pepper. Place in baking dish on top of some sliced leeks or celery. Add some white wine and cover with foil. Bake at 400 degrees for 15 minutes. Baste with your favorite teriyaki sauce or with a wine/butter mixture. Continue baking until cooked thru.

I prefer to cook salmon fillets and steaks thawed instead of frozed. I use a glass oven proof container, spray some non-stick oil in it, place the salmon, add diced onions, a little butter and sliced lemons. season with salt and ground pepper.
Bake at 350 for 20-30 minutes (depending on thickness). Some overns vary and you may need to add to the cooking time by a few miinutes.

For a variation I add dill, chopped garlic, capers etc

you get a large piece of tin foil and place the salmon on there (curl the edges up so it doesn't drip!) season with spices to your taste (anything really goes with this!) place in the oven at 400 degrees celcius and leave it in there for about 20 minutes to 30 minutes depending on the size, believe me this turns out GREAT and it's very easy to make! and the plus side id if you get tires of it at any time you just start seasoning it with new spices and it almost always turns out great

Thaw it first - the worst thing to do to salmon is overcook it.

If you insist on baking vs grilling, it is very simple to do. Season with lemon pepper and/or dill, then cover with foil and bake until fish flakes easily with a fork. You could also broil it and get wonderful results..say 4-5 minutes max per side.

thaw under running water
marinate 1 hour in 1 oz olive oil 3 oz white wine 1 oz lime juice
and a tablespoon of Adobo seasoning. blend all this on high for 5 minutes, adding oil slowly and lastly..
bake at 450 for 15 minutes for mid rare if it is 1 inch thick
