Actually, the fare structures change thousands of times per day due to the airline's constant measurement of demand and capacity sold.
Wednesdays aren't really any better for booking tickets than any other day.

Wednesdays are the day that the special fares come out. If you want a deal, get online at midnight on Wednesday.
