The canonicity of a book (that is, its right to be part of the canon) is dependent upon its recognized authority. This is important to understanding the canon of Scripture:
Many people think the books are considered authoritative because they are included in the Bible; the historical truth is the opposite; they are included in the Bible because they are considered authoritative.
The canon of Scripture is the result of the collecting together of the various writings which Christians of previous times recognized as authoritative. The idea of a complete and clear-cut canon of the New Testament existing from the beginning, that is from Apostolic times, has no foundation in history. The Canon of the New Testament, like that of the Old, is the result of a development, of a process at once stimulated by disputes with doubters, both within and without the Church, and retarded by certain obscurities and natural hesitations, and which did not reach its final term until the dogmatic definition of the Tridentine Council. There is a lot of confusion about the earliest existing texts of the Bible. The oldest extant manuscript of the Bible is believed to be the Codex Vaticanus, (preserved in the Vatican Library), which is slightly older than the Codex Sinaiticus (preserved in the British Library), both of which were transcribed in the fourth century.
As for the story of Jesus, there were at least 50 gospels written in the first and second century CE. Four of them (Mathew, Mark, Luke, and John) were included in the official canon during the fourth century CE and are found today in every Bible. All of the original copies of the gospels were lost. What we have now are handwritten copies, which are an unknown number of replications removed from the originals.
Rudolf Bultmann, a prominent 20th-century professor of New Testament studies writes about the life of Jesus:
We can now know almost nothing concerning the life and personality of Jesus, since the early Christian sources show no interest in either, are moreover fragmentary and often legendary; and other sources about Jesus do not exist. (Bultmann 8)

Check out the council of Nicea, the Niacene Creed. It was there that the Orthodox and Catholics threw out the Gnostics and Pagans and burned their books.
Where are the Gospesl of Mary, Thomas and Phillip?
Why were they edited? Because they gave too much freedom of worship and knowledge seeking to the individual.
It was much easier for Rome to rule a pacified people with one faith than try to appease everyone.

From the best of my knowledge a pope in the early church selcted books considered appropriate and compiled a tome . some also claim some of it was forged and some of the conflicting scripts were burned but not many of us were
actually there so take it with a grain of salt if it help your mind and spirit great if it doesn't reject it but realize it is not one book but the combined effort of several .

The Bible, like marriage was put together by God who said of marriage: What God puts together, let no man put asunder. God inspired men to write and put together His Word which will never be destroyed by man.

The writers received divine inspiration. The Bible is a divine book, a letter of God to all peoples and so the people who put them together received divine inspiration and divine light.

a bunch of "smart" people came together and read all of the different writtings and they then chose which ones were important and they then peaced them together to form the first bible then years later they refined it to what it is now

To sum it up, a panel of men got together and decided what they could put in the bible that would be the most manipulative against female god worship / pagans, etc. Of course there's more to it than that, but that's the basics of it.
