CREOLE SHRIMP COCKTAIL SAUCE
juice of half a lemon
1 c. tomato juice
2 T. Worcestershire sauce
1 T. pepper sauce
1/2 c. celery, finely chopped
2 T. horseradish, grated
Combine all ingredients and serve over shrimp in cocktail glasses.

Classic Hollandaise Sauce
[HOL-uhn-dayz] A rich egg based sauce flavored with a bit of lemon or vinegar, butter and a hint of cayenne pepper. The sauce is served over vegetables, fish, or Eggs Benedict.
The most important aspect of a successful sauce is to use a double boiler and make sure not to allow the water in the bottom of the double boiler to boil, just remain, hot and lightly simmering. You can add a tablespoon of cold water if needed to reduce the heat of the water if it starts to boil.
The sauce should be served immediately upon completion.
Makes: 1 cup
I N G R E D I E N T S
2 tablespoons white-wine or tarragon vinegar or fresh lemon juice
4 tablespoons boiling water
3 large egg yolks
1/2 cup unsalted butter
1/4 teaspoon cayenne
1/2 teaspoon salt
I N S T R U C T I O N S
Melt the butter and keep it warm.
Heat the vinegar or lemon juice until just warmed. Have small saucepan with boiling water and a measuring tablespoon ready.
Place the top of a double boiler over (not in) hot water. (This means the bottom of the top of the double boiler sound not make contact with the water heating in the bottom half of the double boiler.)
Place the egg yolks in the top of a double boiler and whisk until they begin to thicken. Now add 1 tablespoon of the boiling water. Continue to beat the sauce until it begins to thicken. Repeat with the remaining water, one tablespoon at a time, beating the mixture after each addition.
Now add the warmed vinegar or lemon juice. Remove the double boiler from the heat. Beat the sauce briskly with a wire whisk. Continue to beat the mixture as you slowly pour in the melted butter. Add the salt and cayenne and beat the sauce until it is thick. Serve immediately.

try a garlic cream sauce. its so good. if youve been to applebees, its kind of like what they put with their shrimp and steak.
In heavy bottom pot (or saucepan), melt butter over medium-low heat. Add garlic and saute lightly to release flavor. Do not brown garlic! Stir in whipping cream. Bring to a simmer, then reduce heat and let sauce barely simmer until the volume has been reduced by 10% (this is an important step!). Season to taste with salt and pepper.

Sugar Pie's Remoulade
1/4 cup chopped fresh parsley leaves
1/4 cup chopped green onions, white and green parts
1/4 cup finely chopped celery
1 clove garlic, minced
1 cup mayonnaise
2 tablespoons olive oil
2 tablespoons fresh lemon juice + zest of 1 lemon
1 teaspoon coarse-ground mustard
Few dashes Tabasco
Kosher salt to taste
Mix all ingredients well and refrigerate. You can stir shrimp into this sauce and serve over salad greens or use as a dip for cooked shrimp.

3/4 cup mayonnaise
1/4 cup ketchup
1 teaspoon minced capers
1 teaspoon minced gherkins
1 tablespoon sweet pickles
1 teaspoon lemon juice
Pinch kosher salt
Pinch freshly ground black pepper
Place all ingredients in a bowl, and stir until blended.

1 cup mayonnaise
3 tablespoons sweet relish
1 tablespoon fresh lemon juice
3 tablespoons drained capers, rinsed
1 tablespoon chopped fresh tarragon
1 teaspoon coarse salt

Stir together mayonnaise, relish, lemon juice, capers, tarragon, salt and pepper in a medium bowl. Sauce can be refrigerated in an airtight container up to one week. makes 1¼ cups

I prefer a sauce that has a lemon juice base, mixed with fresh garlic, olive oil, and a little salt and pepper. Add chopped chives and a little dijon mustard and its superb with grilled shrimp!

if its battered and fried i like it with marinara sauce but tartar sauce or thai spicy chili sauce is okay too.
if its boiled shrimp i like with shrimp cocktail sauce.
if it's butterflied and baked i like it with melted butter and lemon sauce or a garlic butter sauce.
if it's steamed i like with a mixture of soy sauce, peanut oil, a little water and chopped cilantro (asian style)

For shrmp cocktail I prefer to make my own sauce. Chili sauce (or ketchup) grated horseradish, lemon juice. Make and Chill it at least 1 hour before using.
