Baby Bananas in Coconut Cream

Ingredients
8 ripe baby bananas
1 1/2 cup coconut cream
1/2 cup sugar
1/2 cup water
1/2 tsp salt

Preparation
1. Peel baby bananas and cut in halves. Divide about 1/2 cup of coconut cream (top portion of a can) and place it in a bowl.
2. Place the rest of coconut milk and water in a pot, heat on medium and bring to boil. Then add salt and sugar, stir until dissolve.
3. Add baby bananas and let coconut milk boiling again, then add coconut cream and stir together.
4. Bring to boil, remove from heat, spoon into dessert bowl, and serve warm for best flavor.

In a food processor, put bananas + splash of OJ (to keep them from turning brown), blend until smooth. Freeze excess in ice cube trays, pop out, store in marked zipper bags.
