I studied abroad in Spain for 6 months, I was told if I saved my receipts from groceries, supplies, etc. I could get the taxes I paid returned to me (up to a certain amount). I didn't have time at the airport to ask anybody because I didn't want to miss my flight. Is this something I shouldv'e done at the airport in Spain? Can I do it at the Spanish Embassy?

You can not claim the tax back on things you can not take out of Spain, so food, hotels, etc would be out. You can claim back tax on unused things you take out of the country ie they must still be wrapped and unopened.
In order to claim, you have to get a form from the shop when you bay them and then show the item, form and receipt when you leave Spain or the EU.
Therefore, you are too late.
