hey there,
Consider egg white omelettes with fresh veggies (try to skimp on fatty cheeses) for breakfast, or cottage cheese and fruit. Yogourt and granola or a few whole almonds is also great! For lunches, if you like fish, tuna or salmon on salad (limit your dressing) is a great meal. Grilled chicken, steamed veggies are also good choices. Really, its not about cutting out anything specific- your body needs carbs, protein and good fats. Losing weight is all about burning more calories than you intake, so eating some of your fav. Things like pudding will not hurt you, just try to do it in moderation. It sounds like you've got the right idea, by incorporating more exercise- like walking- into your life. Consider getting some hand weights and doing some weight training too- you won't bulk up, and in addition to feeling stronger and leaner, added muscle will help you burn more calories (and can also even allow you to eat a little bit more...)
To avoid the freshman 15, try not to drink too much (calories in liquor are worthless- and high) and try to make your own meals whenever possible. A lot of college students (myself included) can be temptedinto picking up nasty fast food habits because it is so cheap and convenient- but trust me, its not worth it. If your school has a meal plan that you'll be using, try to make healthy choices- like salads, grilled meats over fried, and watch your portions. You may even find that between running to and from classes across campus you need more food energy than before- follow your body's cues- if you're hungry, eat somethign healthy. This will also keep you from feeling 'starving' at meal times and overeating or grabbing fast food.
good luck with College!

Beating the Freshman 15:
http://www.kidshealth.org/teen/school_jobs/college/freshman_15.html
The pudding is ok as long as you try not to eat one every day.
I eat pudding that's sugar free and it still tastes really good.
For breakfast:
2 eggs
1 slice of toast [try for no butter]
1 cup fat free skim milk or 1 cup orange juice
Snack:
1 piece of fruit
Lunch:
salad with any veggies you like with a grilled chicken breast on top. Try to not use much ressing..and it should be Lite.
Snack:
1 granola bar
Dinner:
a piece of fish [if you like fish]
steamed vegetables
and a small baked potato
Hope that helped!

Well, you could always look in woman's Day and get some really good recipies there. They have low carb, low calorie, low just about everything you don't want in all their meals. Pick up this month's book, they have a whole bunch of diet recipies, and they have exercises to help you lose more weight.
P.S. Sorry if I sound like an advertisement.

I would have to say a really good way of preventing the freshman 15 is to not go off to college and drink yourself silly. I don't know you so I don't know if you'd do that, but I'll tell you people I went to high school with who were fit and average in high school went away and partied hard and have the weight to show it. Alcohol is so full of calories! Good luck with school! :)

its okay, you can eat that pudding, but only once or twice a week. but no more sweets for u! its good that wen walking you ahve your dog cuz he wont let you stop. eat veggies and fruits and instead of a greasy steak and fries for lunch or dinner try eating a salad and try putting little pieces of chicken in the salad or try eating canned beans, peas, potatoes and keep going!

you get the freshman 15 because cafeteria food is so starchy. watch what you eat and get exercise. also, don't order a lot of pizza. my friends would order pizza and not tell me that I was expected to help pay. the pudding is ok, just don't eat a lot of it.
