QUICK PAN NACHOS
1 large can refried beans
1 lb hamburger
1 package taco seasoning
3-4 cups grated cheddar cheese
1 medium can sliced olives
1 large or 2 med chopped tomatoes
1 bunch green onions chopped
sour cream
guacamole
salsa
Brown hamburger and add taco seasoning as package instructs. While hamburger simmers, spread the refried beans into the bottom of the baking dish and place in the oven under the broiler until beans are hot all the way through.
Top beans with hamburger mixture and then spread cheese evenly over the top.
Place back under the broiler until cheese is melted. Top with green onions, tomatoes and olives.
Cut into wedges and spoon onto a plate, top with sour cream, guacamole and salsa then surround with corn chips.
Scoop up with the chips and enjoy!
QUICK TEX-MEX GOULASH
1/2 lb. elbow macaroni
1 lb ground sirloin
1 small onion, finely diced
2 c. tomato juice
1 pkg McCormick's Taco Seasoning
1 can black beans, drained and rinsed
1 can sweet corn, drained
2 c. shredded mozzarella cheese
sour cream
sliced black olives
chopped green onions
Prepare the macaroni according to the package instructions.
(Note: Do not rinse the noodles. The starch left on them helps bind the goulash so it doesn't get too runny.)
Saute the sirloin and onion in a skillet until the meat is brown and the onions become translucent.
Drain the fat off. Add tomato juice and the taco seasoning to the meat. Bring to a boil then reduce heat, cover, and simmer for about 10 min.
In a large pot, combine the noodles, meat mixture, corn, beans, and shredded cheese. Allow this to simmer for about 20 minutes or until heated through and the cheese is melted. You may need to add up to a cup more of the tomato juice if it's too dry.
To serve: place a helping of goulash on a plate then garnish with sour cream, black olives, and green onions. It's nice to set the garnishes on the table as when serving tacos. Don't be afraid to use whatever garnishes you'd use on a taco. Some like green peppers, jalepenos, salsa, fresh diced tomatoes, crushed torilla chips, cheddar cheese. Get creative!
This dish is so easy even someone a little intimidated with Tex-Mex cooking can really shine and look like a pro!

Quick Tuna Salad
INGREDIENTS
1 (7 ounce) can solid white tuna packed in water, drained
1/4 cup creamy salad dressing (such as Miracle Whip™)
1 tablespoon sweet pickle relish, or to taste
DIRECTIONS
Mash tuna together with salad dressing and relish in a small bowl with a fork. Serve.
Quick and Easy Fish Tacos
INGREDIENTS
15 breaded frozen fish sticks
1/4 cup vegetable oil
5 corn tortillas
1/4 pound finely shredded red cabbage
1-1/4 teaspoons tartar sauce
1/4 cup and 2 tablespoons salsa
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Arrange fish sticks in a single layer on a baking sheet, and bake 20 minutes in the preheated oven, or until crisp and golden brown. Remove from heat and cut into thirds.
Heat the vegetable oil in a skillet over medium-high heat. Fry the tortillas until soft. Drain on paper towels.
Fill the heated tortillas with fish stick portions, cabbage, tartar sauce, and salsa to serve.

Boil angle hair pasta.
cut up 2 cloves garlic and 1 small onion
stir fry onion and garlic in 1 tablespoon olive oil. add pasta and stir fry till pasta is warm.
Add soy sauce till pasta turns light brown
This is the fastest recipe I have and all who eat this enjoy it. You can add anything else you like but use small amounts.

Cajuin Chicken Sandwich
Chicken breast
Cajuin spices
bread (any type)
Sprinkle cajuin spaices (as little or much as you want) on raw chicken and grill until cooked.
Put on bread.
Add lettuce, tomato, and sandwich sauces if you like.
I love this recipe because you can choose how ever much or little you want and you can make it your own!
