Paul is quoted because he has validity as a prophet of God and called Apostle of Jesus Christ. Paul was called by the Lord to set both the doctrine and the operaton of His church in order.
There is no difference between what Jesus actually said and what Paul actually wrote to the church; any more than there is difference between Old Testament and the New Testament. As the Lord said when He was here in the flesh. You search the Scriptures, because in them you think you have eternal life, and they are they that speak of me.
You will find that the New Testament, especially inspiration given to the church through the letters, are largely direct quotes or references to Hebrew Scripture.
Many times, when one is quoting Paul, one is also quoting the Old Testament; where the Lord Jesus was speaking to yet another prophet. That prophet in turn had been inspired, in his day; to speak things which now unveil to us, by the spirit of truth in this day, through the writing of St. Paul.
In summary the Bible is the Word of God. That word, know as the Lord Jesus Christ was made flesh and dwelt among us. Now again he is present in flesh in those who believe. Whereas the others you mention are all dead.
Jesus Christ is more than an experience or feelings; but the established truth; which is proved by his life, his healing, his presence, his written promises, the testimoney of believers, the law and the prophets. He is both the subject of the Bible and its author.
There is hardly any comparison that can be made between the only living God and the human founders of four religions.

Can you be more specific, I mean if it were me and I was speaking of my own soul, Im not sure I would take the word of someone who wrote a blog over the words of Christ. But thats just me. Consider the source and who gave up their life for who. Edit- when I said specific, I meant what issues do you have with the bible, not which version.... If you think about it, God made everything, the bible speaks of dinosaurs ( behemoths, tanniyns, leviathans ), and if you read genesis VERY CLOSELY, just the first few lines, you will see that the earth was made before day and night were created, and it does not specify how long it took the Lord to create the earth, only how long it took to be habitable. People have been misled to read what their mind wants to read, but if you are saved and spirit filled, ( acts 2:38-39 ) you will have the blinders taken off, and God will reveal His Truth to you. Once you know the truth, everything makes sense. Here is another prime example... you have people on here that swear up and down in the book of Revelation that Jesus is going to kill children... but for the STUDIED PERSON, we know that is refering to jezebel and her "false religions" not little kids. If Jesus rose from the grave, then anything thats questionable is truly a piece of cake for Him. Here is another issue... everyone baptizes in the name of the Father, Son and Holy Ghost.... but I challenge you to read these verses, it will only take a few... Acts 2:38, Acts 8:15-16, Acts 10:48, Acts19:5, Acts20:28, 1 Tim 3:16 Isaiah 9:6- read this one twice, who is the child ? Now, isnt it a trip when you realize who was really on that cross for you ? Have faith in our Lord. Pray and ask Him for the truth, you will never find it looking for faults. He is perfect and sinless. God bless in Jesus name one more thing... you may know it says that even the VERY ELECT will be deceived... dont trust men and their opinions and lies.. satan is slick, but Jesus will set you free.

It's a matter of giving your source. I know everyting I've ever learned is based on other things I've learned. New ideas you hear lead to other ones. I always feel I should give credit. Was it Freud who said, "I stood on the shoulders of giants." and all we've done is based on the people in history, at least to some extent. I hate to quote myself as an authority, who knows me? Sometimes it's not illogical to quote and expert witness as evidence.

Why would we need to? It would seem that Acts is all the validation Paul would need.
And why did you switch from Paul's validity to the validity of Jesus' teachings?
