This is a food that I just recently found out I love- how do you like to have them or what dishes do you prepare with them?

guacamole
add to omelettes
on tacos, or any tex mex dish... sliced
in my sandwiches (w/turkey's my fave)
on a salad
on a baked tater w/sour cream and salsa
several different dips
by themselves w/a lil salt n lemon juice

Avocado Tacos

INGREDIENTS
3 avocados - peeled, pitted, and mashed
1/4 cup onions, diced
1/4 teaspoon garlic salt
12 (6 inch) corn tortillas
1 bunch fresh cilantro leaves, finely chopped
jalapeno pepper sauce, to taste

DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C).
In a medium bowl, mix avocados, onions, and garlic salt.
Arrange corn tortillas in a single layer on a large baking sheet, and place in the preheated oven 2 to 5 minutes, until heated through.
Spread tortillas with the avocado mixture. Garnish with cilantro and sprinkle with jalapeno pepper sauce.

Brown bread, mayo, sliced avocados...and a topping of alfalfa sprouts - great summer sandwich.

Sliced and arranged on a salad plate with alternating sections of orange or tinned grapefruit...dress with mild vinaigrette, serve garnished with watercress.

Make a thousand-island dressing and use it to top cubes of avocado in a shrimp-cocktail type glass. Quick mode: mayo and ketchup and a few capers for *zing*.

Sliced on Sandwiches (think of a BLT with AVO!!!)
Eaten out of hand, just some salt and pepper
Avocado, Tomato and Red Onion Salad (with a favorite vinaigrette)
on Chicken Tacos
on Burritos
Sliced on Salad
Cobb Salad (one of my favorites)
I could go on and on, but those are some of our favorites!!!

TACO DELIGHT

2 cans bean dip
3 avacados
Lemon juice
Salt
Pepper
8 oz. sour cream
1 c. mayonnaise
1 pkg. taco mix
2 to 3 chopped tomatoes
1 bunch green onions, greens, too
1 can ripe olives
1 1/2 c. shredded cheddar cheese

Spread layer of bean dip in dish. Mix avacados, 2 tablespoons lemon juice, salt, pepper together. Layer on top of bean dip. Mix sour cream, mayonnaise, taco mix. Layer on top of avacados. Top with decorative layer of onions, olives, tomatoes, cheese. Serve with tortilla chips.

I just looooove an avacado and sliced turkey sandwich. Cold cuts will do if you don't have any leftover slices of baked turkey.

cold turkey slices + lettuce + avacado on buttered sourdough roll (or with just a lil bit of mayo instead of butter) = HEAVEN! :)

for a quick lunch i make an avocado sandwich. butter some toast and add the avocados sliced with a little salt.

guacamole is great ofcourse too!

Nice slice of avacado with chicken breast, bacon slices, lettuce and tomato. To keep it from turning brown, sprinkle it with squeeze of fresh lemon juice.

I like to peel it and douse it with Italian dressing and just eat it. Otherwise, it's also great in pasta salads or sandwiches.
