You can freeze cake layers, brownies, cupcakes, muffins, etc. Just freeze them without frosting.
I am responsible for taking treats to work for co-workers birthdays, and my daughter and I will have cupcake-baking days where we bake 5-7 batches of cupcakes and freeze. Then the night before I need them, I take them out, frost them while they are frozen and put them in my cupcake carrier. They thaw out overnight and taste as fresh as if I just baked them.
Just be sure that everything is wrapped well to prevent freezer burn. If I were freezing a cake layer or a pan of brownies, I would wrap in plastic wrap and then put into a freezer bag.

It depends very much on what kind of cake it is - and to a lesser extent how you wrap it. Given that you write about icing, if you're contemplating a fruit cake (like a birthday or Christmas cake) they usually last for ages if well wrapped in foil and kept outside a freezer, especially if the recipe has a little alcohol in it; in fact cakes like that are meant to mature and my guess is that freezing would spoil them. The danger in freezing anything is that it can dry out - what you observe as 'freezer burn' on meat. So if it were a sponge cake, and you had no choice other than make it plenty ahead of time, I'd wrap it really well in foil and I don't think I'd want to trust the icing not to spoil. But seriously, most cakes are best kept wrapped in airtight tins.

I was an assistant pastry chef for a long time. We would constantly freeze cake layers, and brownies, however I would not recommend freezing an iced cake and I would freeze them when they are fresh, not after they have sat out for a week on you counter. Because then they may just turn out hard as a rock.

hi baby happy 4th of July to you it's da diva here and if you put brownies or cake into the freezer most likely it will get real hard and it might taste funny ohh sure it Will last long if you reheat it in the microwave.lol got to run hun love ya smootches da diva.*

I'd say you could keep them for 6 months in the freezer. Unless you don't wrap it well, it will taste the same when you take it out.

Nothing it will keep it moist for when you are ready to serve.Be sure to set in fridge to defrost in fridge.
