hi is tripe nice ??? ( the insides of a cows stomach ! ??

It has to be cooked long enough. If it is tender, it can be quite nice. It's fatty feeling and full of flavor. Unfortunately, if it is undercooked the texture is enough to put people off from trying it again.

I like it I have had in Chinese restaurants as a soup or in a dim sum dish, Menudo is a great morning pick me up and the tradtional Tripe al a Mode from France is quite a nice dish, a bit involved but it is one of those ingredients that has no real flavour, but tend to take on the taste of what it is cooked with.

A pressure cooker is best, but a crock pot will do, long and slow and lots of flavour and spice, I cook mine with either a piece of short rib or a smoked or fresh pork hock.

And then once it is cooked add white beans, lots of aromatic veg and tomato product, this make it more flavourful. It is best eaten in the fall and winter as it can be very filling. But in my years as a chef in Canada, I saw it and ate it a number of time and they have some creative way of using in Singapore and Jamaica were I had stints.

When I was younger I had a mother of a Mexican friend offer me some soup. She did not tell me what i was. Well it was Menudo!. Tripe soup. In fact it was very good. It has to be cooked for a long time to make it soft. Add hominy and tomatoes, I don't know what else. But I thoughly enjoyed it.

My mom loved tripe and used to cook it in a spicy tomato sauce. I personally have never touched the stuff, the texture was not my idea of a good time, but I did fall in love with stuffed beef heart with a cabernet sauce!

I love it, with plenty of onions, in a white sauce, and a mountain of mashed potatoes.
