I say nothing boring because we just got back from 4 days at the lake. I've had all the ribs, hot dogs and hamburgers I'm going to want for a while. Tonight I was hoping to shake things up.

Cedar planked salmon
1 3-4lb filet of salmon
1 cedar plank - 1 to 2 inches larger then filet of salmon all the way around
3 tablespoons of olive oil for brushing the plank
3 tablespoons of olive oil for drizzling over salmon
1 cup brown sugar
1/2 cup Salt
2 oranges zested
1 large head of garlic peeled and chopped very fine
2 large onions peeled and sliced thin
1 cup basil

Soak the planks in water for a couple hours prior to cooking- some grocery stores sell the planks, william sonoma has them, or buy untreated cedar planks at teh lumber yard.

Mix salt, brown sugar, and orange zest and spread it generously on both sides of salmon filet. This procedure can be done 1 to 2 hours in advance.

Brush one side of the plank w/ olive oil, spread garlic puree on the plank. Place salmon filet on top. Sprinkle the salmon filet w/ garlic. Cover generously w/ sliced onions and then drizzle w/ remaining olive oil.
Place the planked salmon directly on the grill. Let it set on fire, let it burn to the edges of the salmon. Place a lid over the grill to smother the fire and cook salmon for approximately 10 to 15 minutes. Use probe thermometer to be sure. 120F is medium rare.


Serve with roasted potatoes with dill and butter, and some green beans or asparagus.

You could make a pasta dish like cooked chicken breats with mixed veggies as well as onions and green pepper in a little of oil like a tablespoon and cook til the veggies and chiocken is tender. While that's cooking, have any pasta cooking excepy spaghetti cuz that won't work . Use like them swiggaly noodles and mixed when both are finish and you could also mae a french loaf which you ca buy at acme but wehen your baking it, but your oven on 325 not 350 cuz It'l burn and get a krispy if you bake it on the thime suggested but that's what I'd do and it comes out really well if you take your time so enjoy!

Try shrimp kabobs. Skewer some shrimp and veggies and cook on the grill. Very quick meal. You can also make some with meat. I like "City chicken legs" which are pork, beef and chicken on a skewer. Marinate with some Italian dressing and cook on the grill.

salmon is always a nice bet.or fresh tuna just seared and then sliced makes a pretty dish.you can make a crust for either with sesamee,chopped parseley,dill,green onion.
serve with baby spinach,avocado or sliced pear or kiwwi,sliced purple onion ,black oilives.but fresh not canned and cubes of feta cheese or mozzarella.have a crusty, warm bread for the salad.
ice cream with crumbeled almond cookies drizzeled with hot caramel sauce and amaretto or kalua!!!!!
soup can be cold cucumber or cold toamto soup,gazpacho!!!
have fun.do not forget the wine!!!!

go southern and deep fry a turkey.

veggie- tofu hot dogs.

choa tom Vietnamese is good and the grilled shrimp paste on sweet sugar cane is um good.
i recommend the nauc nam sauce though others like the peanut fro dipping
don't smell the sauce just barely dip its strong and eat it
its fun to watch everyone try to keep their little creations together.
and to watch everyone try to not rip the rice paper shells..
barbecue it lay out all the ingredients and go for it..
sake or beer on the side.

you can do
steak, chicken, shrimp kabobs
grilled veggies
scallops with a passion fruit beurre blanc
brisket or pork loin
make a nice guava bbq sauce and potatoes

make grilled jerk chicken, kebabs, and fish. bake some sweet potatoes with cinnamon, nutmeg, and butter. grill some veggies with herbs...delicious and different.
