It is not possible to answer without more information about your health, your family medical history and your environment.
If the reason for the question is, you want to sell a kidney or half a liver, the answer is, both surgeries involve risks. Does the surgeon or medical transplant facility offer risks of his/its own? How many operations have they done? How many have resulted in death or serious sonsequences? Do they have insurance to cover you in those events? How willingly does the insurer part with money: do you have to sue them to pay, or do they pay without a fight? How well do they take care of you afterward? Some places prefer to let you die on the operating room table rather than face paying out your lifetime of living and medical expenses. Sure you really want to take that chance?
If neither you nor your family have a history of liver or kidney problems, and there are no risks for them in your environment, the risks are probably about the same, except that your liver cells will eventually be replaced with new ones, so that, in the long run, half a liver is less risky. The surgery for the liver is, however, more risky.

One kidney, I suppose, although one kidney can do the job just fine.
Half a liver? Well, your liver cells will regenerate the other half of the liver in a short while.

One kidney. When you donate or receive half of a liver, the cells regenerate themselves but with one kidney you have to be alot more cautious about what you put in your body.
