My favorite vegetable is the pea, pisum sativum, as it seems to be an originally european bean-type, and as it can be eaten both raw and fried or boiled.

The originally southamerican bean-type, phaseolus in all its variations, does have to be cooked before it can be eaten, else it is poisonous.

The peas can be quite delicious, even sugary, and can be combined with much other food. Another type of pea, ckickpea (cicer), can even be more delicious and nourishing, but it seems to be less available.

Anyway, the test of healthiness that I refer to when I shall eat and enjoy some vegetable, is whether a vegetable can be eaten both raw and cooked, or cooked only. When it can freely be eaten both raw and cooked I will consider it as being more healthy and I will treat it as my favorite vegetable.

I just can't narrow it down to one, but here's my top 3. Tomatoes, because they're delicious and very versatile raw or cooked. Corn, because it's nummy anyway you fix it, including popcorn. And definitely artichokes! I could live on those, I think,

i am a big veggie eater, so really hard to choose just one. I will throw off a few that I love, Broccoli, mushrooms, cucumbers, celery with peanutbutter, sweet peas, and brussel sprouts, which we call cat heads, lol.

I used to work in a healthy food shop and sometimes a family with 2 boys would come in. They would always screams: Broccoli! Broccoli! Can we please have some Spicy Broccoli?

Me and hubby really don't have any favs... but I do love aspagus... especially dipped in Ranch dressing!!! mmmmmmmmmmm.. I'm not too thrilled with califlower... but will tolerate it lol

Pumpkin, especially roasted but stirfried with egg and pork the way they do it in Thailand is also my other favourite way of cooking it.
