This is the BEST meatloaf ever...it's a little more involved than most, and everyone thinks the veggies are a weird addition when I tell them what's in it! You don't taste them really, they just help make a really moist and flavorful meatloaf!

Ingredients:
3 Tbs. unsalted butter
3/4 cup finely chopped onion
3/4 cup finely chopped green onion, white and green parts
1/2 cup finely chopped carrots
1/4 cup finely chopped celery
1/4 cup minced red bell pepper
1/4 cup minced green bell pepper
2 tsp. minced garlic
salt to taste
1 tsp. freshly ground black pepper
1/2 tsp. white pepper
1/4 tsp. cayenne pepper
1 tsp. ground cumin
1/2 tsp. freshly grated nutmeg
3 eggs, well beaten
1/2 cup ketchup
1/2 cup half-and-half
2 lbs. lean ground beef chuck
12 oz. sausage meat (not fennel-flavored Italian sausage)
3/4 cup fine fresh bread crumbs, lightly toasted on a cookie sheet in a 300 degree oven

Directions:
Preheat oven to 375 degrees.
Melt butter in a heavy skillet, and add the onion, green onions,carrrots,celery bellpeppers and garlic. Cook, stirring often until moisture from the vegetables has evaporated,10 minutes. Set aside to cool; then refrigerate, covered, until chilled, at least 1 hr.
Combine salt, black pepper, white pepper, cayenne, cumin, nutmeg and eggs in a mixing bowl and beat well. Add ketchup and half-and-half. Blend thoroughly.
Add chuck, sausage and bread crumbs to egg mixture. Then add chilled vegetables and mix thoroughly with your "clean" hands, kneading gently for five minutes.
With damp hands, form mixture into an oval approximately 17 by 4-1/2 by 1-1/2 inches, resembling a loaf of bread.
Place loaf in a baking dish into which it will fit comfortably. Place in oven and bake 45-50 minutes. Let meatloaf rest 15 minutes before slicing. Serves 6 to 8.

Italian Meat Loaf

4 large eggs
1/2 cup breadcrumbs
6 tablespoons grated Parmesan cheese
3 tablespoons olive oil
1/4 cup chopped fresh parsley
1/4 cup minced onion
3 large garlic cloves, minced
1 teaspoon each salt and pepper
1-1/2 pounds ground chuck beef
1/2 pound ground pork
1 small can (8 ounces) tomato sauce

Preheat oven to 375 degrees F.

Combine eggs, breadcrumbs, Parmesan cheese, olive oil, parsley, onion, garlic, salt, and pepper. Add ground beef and pork and mix thoroughly. Turn into a loaf pan. Cover meatloaf with tomato sauce. Bake 1 hour and 15 minutes or until done. Let rest 15 minutes before serving.

OK I'm not going to go into details about the original recipe but if you wanna kick your meatloaf up a Nocht me myself i love tangy and sweet or maybe a sweet and sour taste but to get to the point try using french dressing in your meatloaf when your folding it use this instead of ketchup and use yellow and red bell peppers instead of green then maybe do some garlicky green beans with some scalloped potatoes your tastes buds might just burst because that's lot a flavor lol and if you do try this recipe let me know so i can come to dinner lol!

Here's something to try!

Chorizo is a spicy (SPICY), skinny little sausage (see also, linguisa and cerise). When making your loaf, put 3 or 4 of these in, lengthwise, at different levels.

That is, put down an inch of loaf mix and put a sausage on the left, add an inch and put one in the middle, more and on the right, see?

When served, each slice will have three or four little 'rounds' of spicy goodness, and the paprika and other spices will flavor your whole meatloaf!

~~ Moist and Delicious Meat Loaf~ ~ (lower calories )
To approx, 4-5 Pounds of fresh ground beef or turkey:
In a small bowl, beat 2 large whole Eggs, add 1 / 4 cup of Ketchup, 2 Tbsp Worcestershire Sauce, 1 Cup Oatmeal,
1 Diced, large Bell Pepper, 1 Diced, large Onion, 1 Tbsp. minced Garlic (or 2 tsp. Garlic Powder), Salt and Pepper to your Taste.
Bake in Glass Meat Loaf Dish, on High in Microwave for about 12- 15 Minutes.....POUR OFF FAT. Now carefully place in Electric Oven, Bake for another 30 Minutes. at 350 degrees. Remove from oven. Drain off Fat. In a Cup, measure out 4 TBSPS. Brown Sugar, 1 TBSP. Mustard and 1/4 Cup Ketchup.... .Stir well with a Fork. Spoon this mixture on Top of Meat Loaf to Cover. Return to Oven for about 10- 12 minutes. Remove and cool slightly before slicing.
This is my own receipe and is even better the 2 or 3 rd day...Meat Loaf Sandwiches. m-m-m Enjoy.

Instead of bread crumbs, try using oatmeal...
Add a few cloves of garlic! This will not only make the meatloaf taste great, but it will offset the toxins that are in the meat!!! I also add a dash or 2 of sage and cheyanne, lots of parsley, and paprika. Oh... and onions!!! Can't forget those! and bell pepper too! lol

You can buy Mrs. Dash Original blend. It has many of the great herbs and spices that your body can use!!!!!

When's dinner????? lol I'll be there with bells on! lol (and I'm a partial veggian!) ROFLH!

EASY ITALIAN MEATLOAF

2 1/2 lbs ground beef or chuck
2 large peppers, red or green, coarsely chopped
1 16 oz can diced tomatoes
1 large sweet onion, chopped
4 slices bacon
1 1/2 cups Italian breadcrumbs
1/4 cup grated Parmesan cheese
2 tablespoons minced or pressed garlic
1/2 teaspoon basil
1/3 teaspoon oregano
1/3 cup chopped fresh parsley (do not substitute)
1 teaspoon seasoned salt or beef bouillon powder
2 eggs
1/3 teaspoon ground black pepper
1/3 cup ketchup (or more as needed)
onion and garlic powder to taste

Preheat oven to 375°F.
In a large bowl, combine meat, eggs, seasonings and remaining ingredients except ketchup and bacon, adding breadcrumbs to mixture last. If meat is low in fat, add up to 1 tablespoon olive oil. Mix well.

Press meat into a loaf shaped pan, forming a dome shape. Brush top with ketchup and sprinkle with onion and garlic powder, salt and pepper. Cover with bacon slices. Baste occasionally with additional ketchup during cooking, being careful not to allow oven to get cold or additional cooking time will be required. If desired, cover with thinly sliced onions.

Bake uncovered 1 1/2 hours.

Variation: Substitute your favorite barbeque sauce for basting.

Meatloaf Wellington

2 medium carrots
1 stalk of celery
1 small onion
1/2 cup of parsley sprigs
2 slices of bread
1/2 pound of swiss cheese
2 pounds of stew meat
1 egg
1 teaspoon of salt
1/2 teaspoon of pepper
1 tablespoon of prepared mustard
2 tablespoons of milk
an 8 ounce package of crescent roll dough.

Preheat oven to 350 degrees. Coarse grind carrots, celery, onion and parsley into a large bowl. Fine grind bread, cheese and stew meat. Add egg, salt, pepper and mustard. Mix well. Shape into a loaf and place in a baking dish. Roll crescent dough quarters into 9" x 5" rectangles. Cut rolled dough in half, lengthwise, and cover loaf. Brush with milk and bake for 1 & 1/2 hours.

mine is real simple. take a basic meatloaf recipe, and instead of using all breadcrums or crackers crumbs, i use a mix of 50% crumbs and 50% parmesan cheese. instead of 3 eggs i'll add 2 and add about 1/4 cup ketchup (per lb of burger) and 1/4 teaspoon ground mustard. mix and bake as usual

I use a regular meat loaf recipe (no ketchup) and then add Italian style tomato sauce (onion basil) and add chopped onions and green/red sweet bell peppers....I flatten it out and put a layer of chopped frozen spinach drained well...and then roll it up and seal the ends....bake and during the last 25 minutes of baking put a layer of the tomato sauce on top...and then cover with a layer of mozzarella cheese...
