I can't think of any interesting ways of cooking chicken breast, so has anyone got an ideas. Thanks!

I have red and green peppers, cheddar, salad, tomatoes, cheese sauce, gravy, potatoes and herbs in the cupboard.

Marinate in garlic and olive oil and then wrap in bacon or parma ham and roast in the oven.

Or stuff with sundried tomato paste and mozzarella and roast in the oven

so few ingredients but i think we can make something interesting!dry the fillets with kitchen paper.make a marinade with a little olive oil(sunflower if you dont have it )and some nice herbs - oregano and rosemary are good.cut the fillets into slices and put into the marinade for a couple of hours.meanwhile thinly slice a red and green pepper and fry till soft.put on one side.when the chicken has marinated,peel and grate a large potato and dry well on a clean teatowel.mix with the peppers and season with blavck pepper and little salt.form into a potato cake - it doesnt have to be neat!heat a little oil in a frying pan and fry the cake till golden ,turning halfway through.at the same time quickly stir fry the chicken in very little oil till brown.drain on kitchen paper.place the potato cake(roshti) on a plate.lay the chicken pieces,overlapping on the top.serve with a nice green salad on the side - if you had olive oil drizzle with a dressing of the oil,mixed with a little lemon juice.Do you have some crusty bread ?

Lay it on a piece of foil large enough to wrap it. Chop some onion,garlic,small pieces of carrot,slices of courgette on top of the breast and some lemon juice or/and some dry white wine, about a dessert spoon full. Fold and seal the foil and cook on a baking tray for about 20/25 minutes.
It makes a lovely and succulent meat dish. Serve with new potatoes and any delicate green veg such as green beans or monge tu.

AU GRATIN POTATOES/CHICKEN BREASTS

1 box Betty Crocker's Au Gratin Potatoes
3 chicken breasts (deboned, skinned, cut in half or quartered depending
on size)

Place chicken pieces in a well-buttered flat casserole.
Mix potatoes according to directions on the box. Ladle the potatoes over the chicken. (If doubling recipe, one should use less water in the mixing of the potatoes.)

Bake for 45 minutes in a 400 degree oven.

Serves 3 or 4.

POTATOES AU GRATIN

"Au gratin" denotes a topping of buttered crumbs or cheese or both. Although this sounds French, it is all-American! 1/4 c. green onions, sliced 1/2 c. green bell pepper, chopped 1 (2 oz.) jar chopped pimento, undrained 1 tsp. salt 1/4 tsp. freshly ground black pepper 1 tbsp. fresh parsley, chopped 1 tsp. paprika 6 tbsp. all-purpose flour 1 qt. milk (4 c.) 6 c. cooked potatoes, cubed 2 c. (8 oz.) shredded sharp Cheddar cheese
Preheat oven to 350 degrees. Grease a shallow 3-quart baking dish. In a large heavy skillet, heat butter. Add green onions, green pepper and pimento. Saute 1 minute. Add salt, black pepper, parsley, paprika and flour; stir until blended. Stir in milk and cook, stirring, until thickened. Add cooked potatoes and 1 cup cheese. Stir until cheese is melted. Pour mixture into greased dish. Sprinkle with remaining cheese. Bake 30 to 45 minutes or until bubbly. Makes 10 to 12 servings.

Try this
soak chicken in some Italian dressing for about 20 minutes. then lay chicken on a large sheet of foil, season with salt and pepper top with sliced peppers and a small onion, seal foil tightly and place on cookie sheet Bake at 350 for 35 to 45 minutes, Serve over your favorite rice

Certainly !! For cooking two chicken breasts .. peel 6 cloves of garlic and boil until soft then slice. Mix this with 4 tablespoons fresh lemon juice and 2 tablespoons of parsley. Slice chicken breast in half (long ways) and insert mixture into the middle. Pan fry until golden and serve with anything you like. Very nice !!

Add the herbs to the cheese sauce. Yum. And on the off chance you have a bit of bacon lying around, throw some of that on too.

Cut a slit in the breast of chicken fill it with dolcelatte. or any soft cream cheese, wrap it tightly with smoked streaky bacon
and cover in tin foil, cook for 30 Min's the uncover and finish cooking serve with mixed rice and vegetables

Cut open the fillet and stuff with mozzarella cheese (best) any cheese would do I suppose though, then wrap steakey bacon around it and cook for 45mins F*cking lovely

Marinade and roast in tarragon and lemon juice with loads of garlic cloves. Don't peel the garlic when cooked you can squeeze it out on to lovely crusty bread. Serve with salad.
