After I clarified the butter I poured it into a jar and let it cool. I saw the bottom half of the jar scum-like and the top half was clear like oil. Also, on the surface there was a thin, hardened layer which I believed it was fat . I used only the "oil" and discard the "scum" part and the surface layer. Is the bottom bad fat and the top good fat. Thanks.

butter is butter, I don't think this top and bottom theory is a good idea, look for low fat butter, good luck
