Spricht is correct because it's singular, like using the English word "one". In France one/he/she speaks French. If you used "you"/"du" it would be sprichst. "you"/"Sie" would use sprechen.

The sentence is right. Man spricht. Ich spreche, du sprichst, sie/er/es spricht, ihr sprecht, wir sprechen, sie sprechen.

The subject " man" = one , has the same verb conjugation as the er/sie/es form of the verb
Ich spreche
du sprichst
er/se/es / man spricht
wir sprechen
ihr sprecht
Sie/ sie sprechen
