before christianity their was the jewish liturgy. the christian liturgy, as practiced in the catholic / orthodox and anglican churches (and a lesser extent the lutheran), is an off shoot of that liturgy (liturgy of the word and the added liturgy of the eucharist which commemorates the last supper where jesus offered his body and blood as a sacrifice for our sins. this liturgy was practiced ever since the jews formally threw the christians out of the temple worship.
Many protestants still have no clue about the origins of the mass as practiced by so many of the worlds christians. remedy those deficiences so that the body of christ may be healed once and for all.

As Catholics we believe in revelation through Sacred Scripture and Tradition. Even tradition is mentioned in the bible so nothing goes against scripture in our faith. I hope this helps. There are some churches that do this. The one that is the most guilty is the Catholic church. They believe in many ceremonies and concepts that have no Biblical backing at all. However, it doesn't mean that all Christians believe in these same things. Christians don't like being generalized just because of what some people do. It's the same with atheists. They don't like to be generalized because of a few people. Don't believe that all Christians believe in the same thing just because a few believe in it.

For one thing, practices like the Mass, which were so common as to be known to all Christians everywhere, and from the earliest days of the church, had no need of extensive written instructions.
Very few people could actually read back then, anyway.

Before scripture was oral tradition.It was a simple gathering when people would tell stories about Christ while communing(eating together).No bible.No dogma.Just talking hand clapping and simple vocal singing and simple food.

You have to be more specific by what you mean. As far as I know, the Catholic Mass is mainly based upon the Jewish traditions that God gave them in Exodus.
