While looking at Outlook... Click 'Tools' then Out of office assistant... Follow the directions from there... Remember to turn it off again!

Without an exchange server you cannot do so.
I presume you do not have an exchange server and you specify the POP3 and SMTP server. This means that unless your mail server has a way to do what you want, you are unable to do this.
