If you recently started daing: A mixed CD is always cute and thoughtful.
If you have been dating a long time: A photo album of pictures of the both of you, or a framed photo.

Something that he likes. If he's into dressing well, buy him a nice shirt from his favorite brand. If he likes music, buy him an album from his favorite band. If he's into reading, buy him a good book. Just whatever you do, don't buy him cologne or aftershave unless he has a collection and is really into it. It's overdone and he's probably received it from 5 other girls in his life.
