IDEAS that I do at my home:
Marinate in 1000 Dressing.
BBQ sauce brushed on the top.
Garlic, salt and pepper.
Make this sauce to brush steaks with: 1 t. garlic powder, 2 T. chopped chipotle peppers in the adobe sauce, 1/4 C. chopped onion, 1 T. olive oil (or salad oil).

I know I go against the grain of most people. But why does everyone want to screw up a good piece of meat. I do my steaks nice and simple. Only season with pepper. Salt will pull the moisture out of the meat and dry it.
Put on the grill and sear, a minute or so. Turn it and sear the other side. For a 1 1/2 inch steak leave it for about 5 minutes. Turn over and watch it. When the juices start to come out it is medium rare. Ready to serve. If you have guests that don't really like steak give them some A-1 to screw it up.

CHARCOAL-GRILLED T-BONE STEAK WITH
BROILED ONIONS COWBOY STYLE

4 lg. red onions, peeled and sliced 1/4 inch thick
1/2 c. clarified butter
4 T-bone steaks, cut 2 inches thick or more, rubbed with salt, freshly ground pepper and olive oil
Barbecue sauce
2 lg. ripe tomatoes, peeled, halved, seeded, chopped and drained
Vinaigrette
Deep-fried okra

Spread onion slices on baking sheet. Drizzle with some of the butter, turning slices to coat both sides. Place onions under broiler and cook until golden, basting with additional butter. Turn onions to cook both sides. Onions should be tender, but crisp and golden.
Grill steaks over lump charcoal (not briquettes). Drizzle onions with barbecue sauce of your choice. Toss tomatoes in a vinaigrette and put on top of the onions. Serve with grilled steaks and deep fried okra.


GRILLED T - BONE STEAKS FLORENTINE

1/3 c. olive oil
2 tbsp. minced fresh parsley
1 1/2 tbsp. balsamic or red wine vinegar
Salt
1 tsp. minced fresh rosemary
1 garlic clove, minced
Freshly ground pepper
2 (3/4 to 1 inch) thick T-bone steaks

Blend the first 6 ingredients in a shallow pan. Add steaks, turning to coat both sides. Let marinate at least 1 hour. Prepare barbecue (medium-high heat). Drain steaks and sprinkle with salt. Place the steaks on the grill rack and cook to desired doneness, about 4 minutes per side for medium-rare. Serve immediately. 2 servings; can be doubled or tripled.

This is simple, yet flavorful.

I do a dry rub on both sides of 2/3 garlic salt and 1/3 black pepper. Then I rub A1 steak sauce and let it sit for about 1/2 hour. Grill. Simple, tasty.

Any good steak stands on its own. Melted butter and ground pepper is all that is needed whether it is grilled, fried, or any other direct heat method. Just grilled two large sirloins using melted butter and pepper. Turned the grill to highest, tossed on the steaks, poured on the butter and sprinkled pepper. Let cook for seven minutes, turned over when the grill marks were barely burned in, more butter and pepper. Cooked until the edges were hard-brown and the center felt like the meat at the ball of my thumb. Came out medium-rare and fantastic.
