CHICKEN AND SAUSAGE GUMBO
3/4 cup all-purpose flour
1/2 pound smoked sausage -- sliced
3/4 pound chicken breasts -- cook and shred
1 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped celery
8 cups water
2 cloves garlic -- minced
1 bay leaf
1 1/2 teaspoons cajun seasoning
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1 tablespoon Worcestershire sauce
dash hot sauce
3/4 cup sliced green onions
4 cups hot cooked rice
Prepare chicken breasts and shred. Set aside. Brown sausage, onion, and green pepper in skillet. Drain fat. In Crock-Pot, combine shredded chicken, sausag e mixturee, celery, water, and seasonings. Cover and cook on Low 6 to 8 hours or on High 3 to 4 hours. serve over rice and garnish with the green onions. Serves 8 to 10

I make a Georgia version of gumbo & my family loves it!! Take & slice up 1lb of link sausage such as andoulle....brown in skille with a little olive oil, minced garlice & diced onion. Drain meat back into skillet, then place into large stockpot. Take a little butter & flour & make a roux from the drippings, then add to meat. Add 2 lg cans chopped tomatos, peeled & deveined shrimp, crawfish, okra & corn. Add enough water to cover & 2 bay leaves, garlice powder, onion powder, paprika & a little cayene pepper. Simmer over medium heat for at least 2 hours, then serve over steamed rice with a nice green salad........

6 boneless chicken breast cubed, 5 pounds of large shrimp, 5 pounds of crab meat, 5 pounds of crawfish tails, 2 ounces of oyster, 12 stalks of chopped okra, 1 stock of celery, 3 stocks of green onion, 1 yellow onion, tablespoon of cayenne pepper, 1 bay leaf, and 1 tablespoon of gumbo fillet. That's how we do it here in Louisiana!
