Why do people reccomend cutting down on starchy carbs when trying to lose weight?
Id understand that if they are referring to all the processed stuff thats loaded with sugar but what if its plain whole grain bread?
How many servings should I have (say a 2000 calorie diet)

starchy carbs break down quicker and that causes you to have insulin spikes, which contribute to weight gain. if you eat a potato, eat it with the skin.
I personally eat whole grains, potatoes with skin, corn meal, oatmeal, etc. I just don't eat white foods- white sugar, white bread, white rice, alcohol, etc.
A diet should usually have 1 serving with each meal, like for example, 1-2 pieces of toast at breakfast, a potato with skin at lunch, maybe some brown rice at dinner.

Starchy carbs are bad because they digest so quickly, releasing a lot of energy into the blood at once. So your energy level goes up really high, and then crashes once the carbs are quickly digested. Once it crashes, your body wants energy and makes you hungry for MORE starchy carbs. So you end up overeating. Fat and protein take much longer to digest so that your body has a constant energy supply over a period of time. With fat or protein you get hungry less often, and overall eat less.

Look for whole grain bread with 2-4 grams of fiber in it per slice. That will mean it isn't as processed and refined as say... cheap white bread. For 2,000 calories... I would say a maximum of 8 servings of whole wheat breads, whole wheat pasta, and brown rice. A serving would be about 100-120 calories worth of the food.

I never got the low carb diet thing, even before I began to care about what I did and did not put into my body. I couldn't figure out how things like fruits and vegetables are supposed to be evil.

Personally, I think that things like whole grains are good things. I eat them, at least five a day. I think the reccomendation is five to nine. Maybe if I weren't pregnant, I would gain weight off of them. As it is, I'm six and a half months in and I've only gained 16 pounds.

My experience in losing 14 kg comes from reducing not just processsed stuff loaded with sugar, but simple carbohydrates.

I love my vegetables and fruits and lean protein. 2/3 vegetables n 1/3 meat. I take multi grain bread and mostly complex carbohydrates.

Carbs are carbs. They pretty much all breakdown into simple glucose when they finally enter the system. The exception are those high fiber carbohydrates. They don't digest as well and some pass through the digestive system and get eliminated.
