Sometimes I get brainfreeze from water is not that cold, but because I just chewed gum it feels like I just sucked down a slurpee!

I know that it must have something to do with the mint, menthol or eucalyptus, but why do these things "trick" your mouth into to thinking liquid is colder, if in fact the temperature of your mouth is the same?

Depends on the gum. Mint, spearmint, wintergreen and eucalyptus which is used in some chewing gum, have a cooling effect on the tongue and would make water feel cooler.

Because your gum is minty.

And minty fresh gum is naturally going to cool down hot breath. Water just seems to make is colder. :\

the mint is relatively an "irritant" and it makes the tongue extra comfortable so water feels chillier! i understand what you mean 'reason it takes place to me each and all of the time. Like as an occasion they use mint in some lip glosses to plump the lips because of fact its an irritant and it will reason the lips to swell
