Hi, from Texas !!!!
This is what I would make him...
Truck-Stop Buttermilk Pancakes

I'd take him out to breakfast. It's the cheapest meal to eat out, it saves hassle in the morning, and the cooks will cook everything correctly. Steak, eggs, and hashbrowns is always a good choice. Perkins makes good breakfast.
Getting a fancy breakfast somewhere is probably a mistake. The best breakfasts are simple and delicious.

This is easy & yummy.
Stuffed french toast:
Buy a long loaf of french bread and cut it ino 3 inch slices. Then cut a pocket in each slice--don't cut all the way through.
Stuff the pocket with any of these--crumbled fried bacon and shredded cheddar cheese, chopped cooked ham with swiss cheese, cooked crumbled sausage with shredded mozzarella---or whatever else you think might be good.
Beat a couple eggs in a flat dish, and carefully dip each filled sandwich in it on both sides. Fry on both sides in a hot greased skillet until browned & the cheese is melted.
It sounds fancy, but its really easy...and really delicious!

Pancakes are a little too touch and go so I recommend scrambled eggs and brown and serve sausage with toast. Very easy and quick. Throw in a little cheese with the eggs for taste(cheddar, american or mozzeralla). If he he likes spicy food, try a pinch or more of cayenne pepper with a pinch of garlic powder. DEELISH! :) If not, a dash of pepper will do.

French toast is spectacularly easy to make and looks impressive as well. All you need is bread, eggs, milk and a fry pan. Maple syrup and butter are traditional toppings, but it's equally good with fresh fruit, jam, honey or whipped cream.

Most american breakfasts are solid grease; pancakes, sausage, bacon, fried eggs, hash browns. A fruit salad helps but there is only so much one can do about all that grease.
