For a BBQ, how far in advance can I marinade beef, chicken and salmon? Thank you!

I generally use teriyaki/Soy Vay for the fish, Stubb's for the chicken and steak.

I understand it's 1/2 hr for fish, 4-6 hours for chicken and over night for red meat.

You can marinate the meat for up to two days in the refrigerator as long as they are kept cold. My preference is to put the individual meats into a ziploc bag with the marinade and then shake it around before placing it in the refrigerator. If you don't have two days then typically at least 2-4 hours before the BBQ will work just fine. Enjoy!

I like to marinate my meat when I get it home from the store and when I portion it out to freeze it.. I just pour the marinade in and freeze it with the chicken, pork.. I've been doing this for yrs. and I don't have a problem with the meat "cooking" because there's not enough acidity in the marinade it also helps to keep freezer burn away.. However, I do not marinate fish... When it defrosts it's ready for the BBQ or stove..Good luck

It's best to not to marinade anything for over 12 hours, 8 hours is even a better time to pull it out. If you marinade it any longer the acids in the marinade will start to cook the meat.

It depends on what you are using as a marinade(cooking sherry, beer, etc). I generally mairinade meats between 6 hours and over night(depending on how much flavor you want the meat to retain.). Refrigerate your meat, especially fish! Do not pierce it. Flavor and moistness will be lost to cooking. If cooking on a grill, baste your marinade on the meat liberally.

Two days in advance would be good. Keep it refrigerated, of course.
