Always offer a variety of things. Make sure some are nut free and you let people know if they are buying something that has nuts inside. A lot of people are allergic to nuts.
A good few are brownies and expecially rice crispy treats cause everyone loves them and they are really inexpensive to make. Price things low and just make sure you will make you money back on whatever you spent to make everything. One dessert that I make that everyone always goes crazy for is peanut butter and jelly bars. They are one of the best things I have ever made and the never last long.

I would include some for pets. There are recipes online and they are really simple. You could also go to a bakery that has pet treats and see if they would donate some. For humans stick to brownies they are good, simple and you can put things on them to make them different. I would price the brownies 75 cents per bar and the pet treats ranging from 25 cents for small ones to 2 dollars for big ones

I helped with a bake sale once and I actually made and sold home-made dog biscuits. They sold out quickest! (and it wasn't to help an humane society either!)

I can't believe no one mentioned this already -- Rice Krispie Treats... They are the easiest and the cheapest, so you get the biggest return for your money! You can even add M&M's to them, drizzle chocolate on them, add food coloring to them, and lots of other variations to make them interesting.
