It needs to be non-spicy and preferably ground up and browned b/c my husband has had throat troubles (actually closed up the other night and it needs to be small so he can swallow it easier) and I don't want it to aggitate him....

Thawed out hamburger this morning, and realized that all I really know what to do with it is kinda spicy (spaghetti, tacos, chilli, you get the drift) or just make a hamburger, which is kinda boring and considering we'll probably eat our fair share of those tomorrow, Id rather avoid it!

So, any suggestions as to what I can make for dinner tonight? Thanks!

I actually just posted this recipe to another question but sounds good for you too =) I feel for your husband, I have difficulty swallowing and have to be so careful what I eat :(

Hamburger Casserole with Potatoes

INGREDIENTS:
1/4 cup fine dry bread crumbs
1/2 cup milk
1 pound ground round
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons minced onion (1/2 small onion)
1 large egg
prepared mashed potatoes, about 2 to 4 cups
3/4 cup shredded sharp Cheddar cheese
paprika, optional

PREPARATION:
Soak bread crumbs in milk. Mix ground beef, salt, pepper, onion, bread crumb-milk mixture, and egg. Spread in a 9-inch pie plate. Bake at 350° for 35 minutes. Top with mashed potatoes; sprinkle with cheese.


Return to oven for 10 minutes longer, or until cheese is melted and potatoes are thoroughly heated. If desired, sprinkle hamburger casserole with paprika.
Hamburger casserole serves 4.

How about a loose meat sandwich, if you have time. You can do a search on it, but I just cook the meat (about 2 lbs) for as long as possible (at least an hour) in two packages of dried onion soup mix and a cup or two of water. Drain the grease off before adding the soup mix and make sure the meat is very finely crumbled. I also added some worchestershire sauce and minced garlic. This is good on buns with some mustard and maybe some pickles.
Very different from your typical hamburger.

You can brown the meat, cook up some noodles or rice and add some cream of mushroom soup to the meat. You can also put in some cheddar cheese soup and pour the meat mixture onto the noodles and bake it. If that seems too crunchy for what your husband can eat, don't use the cheese soup, the mushroom soup with make a really nice meaty gravy and put that on rice. Just an idea, hope it helps. Ingredients
2 lbs Rib Eye Beef
3 cloves Garlic
3 Green Onions
1/2 White Onion
1/3 cup Soy Sauce
2 tbs Sesame Seed Oil
1 tbs Sugar
Pinch Ground Pepper

Preparation
1. The Meat:

a) Slice the meat very thinly along the grain.

b) Use a tenderizer or the back of your knife to soften the meat.

c) Cut the meat into mouth size pieces.


2. The Marinade:

a) Mince the garlic

b) Chop the scallions

c) Slice or chop the onions depending on your preference

d) Put garlic, scallions, and the onions into a bowl and add

soy sauce, sesame seed oil, sugar, and ground pepper.


3. Add the meat into marinade bowl and let it sit for 1 hour.


4. Cook in a skillet, stirring often until well done.

Hamburger Casserole
3 ounces medium noodles
1(103/4 ounce) can cream of mushroom soup
1/2 cup mayonnaise or sour cream
1/2 cup milk
1/2 cup finely sliced celery
1 (21/2 ounce) jar sliced mushrooms
1 Tablespoon snipped parsley
1 pound ground beef, cooked and drained
seasoning ( I put garlic and meat tenderizer in the meat)
crumbs
1/4 teaspoon paprika(only for bread crumbs)
1 tablespoon butter or margarine, melted
In a large saucepan cook noodles in a large amount of boiling salted water for 10-12 minutes or just until tender; drain.Set aside. In a large bowl stir together soup, sour cream, and milk. Add celery, mushrooms pimento, and parsley. Stir in cooked meat, noodles, and seasoning(unless you already added the seasoning in the meat while cooking it). Turn mixture into a 2-quart casserole. Combine crumbs and paprika. Toss with melted butter; sprinkle over casserole. Bake, uncovered, in 375 degree oven for 30-35 minutes or till heated through. Makes 4-6 servings

I prefer using corn chips instead of bread crumbs for the topping. I would not give him the topping though.

Hamburger and Macaroni Ingredients: 1 pound ground beef 1 yellow onion, chopped (or mixed chopped green onion greens and yellow onion) Olive oil 1/2 teaspoon seasoned salt Dash crushed red pepper 1/2 teaspoon celery seed 1 large can (28 oz) of diced tomatoes 2 Tbsp Worcestershire sauce 1/4 cup chopped parsley 2 cups uncooked macaroni 1. Get a large pot of hot water heating and begin cooking the macaroni as per the directions on the macaroni package. 2. In a skillet, brown the ground beef in a tablespoon of olive oil on high heat. Stir only infrequently so that the ground beef has an opportunity to brown. 3. In a large skillet, sauté chopped onion with a tablespoon of olive oil on medium high heat. Add the ground beef and lower the heat to medium. Add a dash of crushed red pepper. Add seasoned salt. Add celery seed. Add canned tomatoes. Add Worcestershire sauce. Bring to a simmer and let simmer for 5 minutes. Mix in the drained and cooked macaroni and parsley. Simmer for another 5 minutes.I top with Parmesan Cheese

This is a nice soft casserole, not too spicy, I hope this helps

GROUND BEEF CASSEROLE

1 lb. ground beef
1 med. onion, chopped
1 c. grated cheese
4 to 5 med. potatoes
1 can cream of mushroom soup

Brown ground beef and onions together, then drain. Put in bottom of 9 x 13 inch baking dish. Sprinkle cheese on top of meat. Peel and slice potatoes (short or thin) and place on cheese. Heat soup and 1 can of water together until mixed well. Pour over potatoes. Bake at 400 degrees until potatoes are tender or until golden brown.

This might sound funny but is actually good. Fry up scrambled of course the hamburger, make some pasta ( I prefer the angel hair) Then mix pasta and hamburger with a can of cream of chicken soup.

How about something we call "Lazy Rice". You can make it as soupy or tender as you need to with minor adjustments to the recipe but at least it is filling.

You can check out the recipe if you click on my profile for the recipe website. You will find it when you browse the recipes under the main dishes section. The recipes are step by step and most are relatively quick, easy, and economical.

Depending on how much better his throat is doing in the future you can try the foil "baked stuffed zucchini" or the "Moussaka" or my personal favorite "stuffed cabbage rolls" of course minus any chiles.

Hope this helps. Hope he gets better. I have had horrible bouts of strep throat myself and it is NOOOO fun!

This is a recipe my mom used to make when "cleaning" out the veggie bins between pay days.

Quickie refridge stew

ground beef
frozen mixed veggies or fine fresh diced veggies ( anything)
onion diced fine and a few garlic if you want
1 can tomato paste
macaroni
5 boullion cubes
10 c water

Brown the beef with onion and garlic then drain the fat. Add water, boullion cubes and any kind of seasoning that you think your husband can handle.(garlic powder, pepper etc)Bring to a boil and add the macaroni. Wait 10 minutes and add veggies. Wait 5 minutes and serve.
You can add rice or potatoes in place of macaroni .
