These are better than plain old baked potatoes,
Twice baked potatoes:
6 baking potatoes
Shredded cheese
milk
butter salt and pepper
I know you said not baked potatoes but this is like mashed potatoes inside the skins.
Bake the potatoes until softened and done. Cut in half and carefully scoop out the middle. After they are scooped out and put into a bowl, mix like you would for mashed potatoes, with the milk butter,salt and pepper. Take a good sized spoon and put a good helping back into the potato skin. Make sure you have enough for all of the skins. Then sprinkle with the cheese and bake again until the cheese has melted. Its really good. I have also mixed cream cheese with the potatoes and it made it rich and creamy. I have also mixed bacon bits and sour cream into the mix. It is very versatile and you can put your own spin onto it.

My favourite is a variation on scalloped potatoes.
Lightly coat a casserole dish with butter or oil.
Peel & slice potatoes about 1/8" thick.
Form a layer of potato slices in bottom of dish.
Add slices of onion, mushrooms, or corn, as desired.
Cover with another layer of potato slices.
Continue layers until dish is almost full to the top.
Take a can of condensed soup (mushroom/celery/etc.)
Mix well with 1 cup of milk, & pour over potatoes.
You can top with grated cheese or bread-crumbs.
Bake uncovered in 350F oven until brown & bubbly.

ROASTED POTATOES
potatos of choice peeled and cut in quarters
1 tbsp. light vegetable oil
6 lg. garlic cloves, peeled and lightly crushed
1 cup chopped or sliced onions
Salt and fresh ground pepper to taste
Place potatoes in salted water to cover and bring to boil for 2 minutes. Drain thoroughly and cool. Preheat oven to 400 degrees.
Spread film of oil over the bottom of a heavy baking pan in which potatoes fit into a single layer. Add crushed garlic cloves and onions.
QUICK BACON GARLIC MASHED POTATOES
5 or 6 red potatoes
milk,
dash of garlic powder
butter
half jar of Real Bacon bits
salt and pepper
Peel potatoes and boil until soft, mash potatoes, add a little milk a dash of garlic salt, 2 to 4 tablespoons of butter. add a jar of real bacon bits salt and pepper to taste mix through.
VELVEETA POTATO BAKE
5-6 large all purpose potatoes
16 oz. package Velveeta cheese
2 small yellow onions
6 strips of bacon
2 tablespoons oil (any kind)
Adobo seasoning (found in ethnic aisle of market)
paprika
oregano
salt and pepper
3 hot sausage links (if desired)
Wash and cut the potatoes into bite-sized pieces. Pour the oil into a 13x9 casserole dish, and then put the potatoes in.
Chop the onions into small pieces and mix in. Cut the bacon into small pieces and mix in. Sprinkle the seasonings on top (to your taste).
Slice three quarters of the cheese and layer on top, covering the whole pan. You can use more or less cheese according to your preference.
Bake in the oven at 375°F for about 1 1/2 hours. (If you use the sausage, remove from the casings and put small chunks throughout the mixture)

Try a Shepherd's Pie. In this dish you have you mashed potato, meat and veggies all in one dish.
If you are not sure how to make it, do a research for it or email me and i will send you a recipe for the pie.
For a side dish, try potato salad! Make it or buy it at you local grocery store.

cut your spuds into small equal pieces, crush up about 6 cloves of garlic (more or less depending on your love for garlic, i usually use 1 full bulb for a tray) pepper,sea salt, olive oil and fresh basil leaves. cut spuds and stick into a bowl once finished drizzle with olive oil and seasoning add in garlic and basil. toss really well. line a cookie sheet with foil and give it a spray of cooking spray for good measure. next lay spuds flat on tray and cover with foil too. cook on 400 for about 30 minutes and then uncover and continue til they are crisp(i never look at the clock i just check, so the time is guestimation) and then you are done.
