HI, I am a very beginner cook and I don't know much. I can do simple things like bake cakes (by reading the direction on the package) and make pasta (with packaged sauce).

I would appreciate it if anyone could give me some recipes. Make sure to keep them simple and DETAILED. (Sorry about the capital letters, but you can make things bold.) I would like vegetarian recipes, because I don't want to have to prepare meat yet. (I'm not vegetarian, I just want to start at the bottom and go up.) I would really appreciate Indian curries, as I am south Indian. Thanks a lot in advance.

Grandma Ople's Apple Pie

DIRECTIONS

* 3 tablespoons butter

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. Place sliced apples in a large bowl. In a small bowl combine sugar, cinnamon, and flour. Stir well and pour mixture over apples. Cut half of butter or margarine into small pieces and add to apples. Toss apples until thoroughly coated.
3. Pour apples into pastry-lined pie pan. Dot apples with the rest of butter or margarine. Place second pastry on top. Seal edges and cut steam vents in top crust.
4. Bake in preheated oven for 45 to 55 minutes, until crust is golden brown.

2. To Make Apple Filling: Place apples in a large bowl. In a separate bowl combine 2 tablespoons flour, white sugar, 1/2 teaspoon cinnamon, nutmeg, and allspice. Mix well, then add to apples. Toss until apples are evenly coated.

6. Reduce heat to 375 degrees F (190 degrees C). Bake an additional 30 to 35 minutes, until streusel is browned and apples are tender. Cover loosely with aluminum foil to prevent excess browning.

INGREDIENTS

* 2 (9 inch) unbaked pie crusts
* 7 cups peeled, cored and sliced apples
* 1 cup white sugar
* 2 tablespoons all-purpose flour

* 2 cups all-purpose flour
* 1/2 cup shortening
* 1 teaspoon salt
* 1/2 cup cold water
* 2 apples
* 1/3 cup white sugar

1. Peel and dice apples. Add sugar and cinnamon. Cook in a saucepan on low heat. Cook until soft, then mash with fork to form a thick applesauce.

3. Spoon apple mixture into pie crust. Place second piecrust on top of filling, and trim edges. Lightly glaze top of pie with a beaten egg, then sprinkled with a little sugar.
4. Bake till golden brown, about 35 to 40 minutes. Place on a wire rack, and cool 30 minutes.






Glazed Apple Cream Pie

INGREDIENTS

* 1/2 cup white sugar
* 1/2 cup milk
* 1/2 cup heavy cream
* 1/4 cup butter
* 2 tablespoons cornstarch
* 2 tablespoons milk
* 1 teaspoon vanilla extract
* 2 tart apples - peeled, cored and sliced
* 1 tablespoon all-purpose flour
* 1/4 teaspoon ground cinnamon
* 1 (15 ounce) package pastry for double-crust pie
* 1/2 cup confectioners' sugar
* 1 tablespoon milk
* 1/4 teaspoon vanilla extract
* 1 tablespoon butter, softened

DIRECTIONS

1. In a medium saucepan over medium heat, combine 1/2 cup sugar, 1/2 cup milk, 1/2 cup cream, and 1/4 cup butter. Heat until butter is melted, stirring occasionally. In a small bowl, whisk together the cornstarch, 2 tablespoons milk, and vanilla; stir into saucepan. Cook until thickened, stirring constantly. Remove from heat, and set aside to cool slightly.
2. Preheat oven to 400 degrees F (200 degrees C). In a medium bowl, combine the apples, flour, and cinnamon. Mix well.
3. Line a 9 inch pie pan with pie dough. Pour thickened filling mixture into pastry-lined pie pan. Arrange apple mixture evenly over filling. Top with second crust, seal and flute the edges. Cut slits in top crust.
4. Bake for 30 to 40 minutes, or until crust is golden brown and apples are tender. Cool for at least 30 minutes.
5. In small bowl, combine confectioners' sugar, 1 tablespoon milk, 1/4 teaspoon vanilla, and 1 tablespoon softened butter. Blend until smooth; pour evenly over warm pie. Refrigerate for AT LEAST 1 1/2 hours before serving (longer is better).

There are many Internet websites that you could search out to help you find what you're looking for.
My local organic store has one with many excellent recipes in a database. Many websites allow you to ask questions about the recipe as well.

I learned good cooking from many mentors and still do. If you know good cooks, ask them to help you, explaining in detail why they do this or that. I'm certain they'll be flattered and you'll feel more confident.
Generally speaking most good meals are made from basic fresh ingredients. Not fast food packages and cans of food thrown together. I'm not saying you need to make your own tortillas. But someday you might try it and find how good they are.
It takes time and experience to become an above average cook. Look for mentors and cooking classes.
Stock you cupboards with basic cooking ingredients and spices. Learn the difference between oils and what temperatures they can tolerate and their best uses. Contrary to popular belief olive oil is not an all purpose cooking oil.

Spices get old. They should be fresh if possible and taste good in nearly every food you could prepare.

While mashing or whipping boiled potatoes never add milk until your basically done preparing them. It affects the gluten in the potatoes and makes them gluey.

Ingredients
4-6 portions cooked rice
dairy or soya natural yoghurt, to serve
For the curry sauce:
175g/6oz green lentils
2 tbsp sunflower oil
1 large onion, chopped
1-2 cloves garlic, crushed
1-3 tbsp curry powder
1 red and 1 green pepper, stalk and seeds removed, and chopped
2 carrots, peeled and chopped
2 x 400g/14oz cans chopped tomatoes
1 heaped tbsp tomato purée
300ml/½ pint vegetable stock (make with a stock cube or bouillon powder)
100g/4oz frozen peas
3 tbsp vegetarian pesto
175g/6oz mushrooms, wiped and quartered
1 courgette, chopped
salt and freshly ground black pepper



Method
1. Place the green lentils in a large bowl and pour boiling water over them. Leave to soak for 30 minutes. (Alternatively, buy a tin of pre soaked lentils.) Drain.
2. Heat the oil in a large saucepan and fry the onion and garlic together with the curry powder, until the onions are softening.
3. Add the peppers, carrots and drained green lentils and cook for 5 minutes, stirring all the time. Add the tomatoes, purée, stock, peas and pesto, bring to the boil and simmer until the lentils are tender (about 30 minutes). Add the mushrooms and courgettes and simmer for 5 minutes more.
4. Season to taste.
5. Add a swirl of dairy or soya natural yoghurt and serve with cooked rice.

1 onion
3 cups mixed diced frozen veg
2 tablespoons oil
half teaspoon black mustard deeds
half teaspoon cummin seeds
1 teaspoon coriander powder
1 teaspoon garam masala
splash lemon juice

Fry mustard seed and cumin seed in oil until they start to pop. Add finely chopped onion and fry until browning at edges. Add vegetables, sprinkle over spices cover and cook til tender, season with a teaspoon salt squeeze over the lemon and serve.
Serve witj pitta bread or naan. When you improve at cooking this recipe will be your basis for vegetable samosas.

Marbled Eggs

6 eggs
1 tsp. soy sauce
2 tea bags
water

Set eggs in saucepan and fill with water until eggs are covered. Add soy sauce to water.
Bring to boil. Simmer 10 minutes.
Drain and cool eggs until they are cool enough to handle.
Gently crack eggs against the counter, making cracks on various places on each egg. DO NOT YET PEEL THE SHELLS OFF OF THE EGGS.
Return eggs to the saucepan and cover them again with water. Add tea bags to the water.
Bring water to a boil. Simmer for an hour.
Take the sauce pan off of the burner and let sit for another hour.
Take eggs out of the saucepan, peel the shell off and rinse with cool water.

Serve as is or deviled.

This is a dry vegetable recipe. It is made of potatoes and Methi - green leafy vegetable.

1 1/2 cup fresh methi (fenugreek) leaves (cleaned, washed and finely chopped)
Note: You can also use 1 bag of the ready frozen methi sold in Indian grocery stores in the freezer section.

2-3 medium peeled and cut into small pieces potatoes
1 medium tomato, chopped
1-2 flakes of garlic, crushed
Salt To Taste
1/4th tsp turmeric powder
Red chili powder to taste
1/2 tsp cumin seeds
2-3 whole dry red chilies
2-3 tbsp vegetable oil

Heat oil and add crushed garlic and fry till brown. Add cumin seeds and dry red chilies.
When cumin seeds are done and chilies turn brown add salt, turmeric, chili powder and chopped tomato. Sauté foe a moment.

Now add potatoes and mix well. Cook till potatoes are half done on a medium flame.

Add methi and cook on a medium flame till done and till water is fully absorbed.

Serve the aloo methi hot with Chapati or Paratha.

Note: As a variation, the potatoes can be boiled first and then cubed. In this case, the fenugreek leaves should be first squeezed of all the salt water and added to the oil seasoned with spices. Cover and cook for a few minutes and then add the boiled potato cubes. Mix well and cook covered for a little while.

For the Koftas:
1 pound boiled, mashed potatoes
2 tablespoons cornstarch
1/2 cup grated cheese Note : Do not use Mozzarella
Salt and pepper to season
Oil to fry
Put the mashed potatoes through a sieve. Add the grated cheese. Add the cornstarch and salt and pepper for taste. Mix and knead it well. Make one-inch balls and deep fry in oil. Keep aside.

2 tablespoons butter
2 bay leaves
1/3 rd cup onions finely chopped
2 teaspoon ginger paste
1 teaspoon garlic paste
1/2-cup tomatoes chopped
1 table spoon garam masala
1/2 teaspoon turmeric
1/4th teaspoon coriander powder
1/2 teaspoon Pepper
1/4 th cup powdered cashews
1 teaspoon cornstarch
1/4 th cup heavy whipping cream
1/2 cup yogurt
Heat the butter. Add the bay leaves.
Add the onions and sauté for a few minutes till golden brown.
Add the ginger and garlic pastes and fry till light brown. Add the chopped tomatoes. Sauté till the oil starts to separate.
Now add the garam masala, turmeric powder, coriander powder and mix well. Now add the yogurt, cashew powder, salt, and pepper.
Add 1 teaspoon of cornstarch and stir continuously till it is all mixed in. Cook till the mixture is thick. Remove from heat and add the heavy whipping cream.
Add the koftas into the curry.
Garnish with coriander leaves.
Serve hot with Parathas.

Curried Garbanzo beans in a mild sauce

2 cans Garbanzo beans also called Chick Peas
2 large Onions, chopped finely
4 large Tomatoes, chopped finely OR 1 cup of canned tomatoes can be used instead
2 teaspoons Ginger paste
2 teaspoons Garlic paste
2 Bay leaves
1 Star anise
2" long Cinnamon stick
2 to 3 teaspoons Cumin powder
1 teaspoon Garam masala
Salt to taste
1 teaspoon Sugar
2 to 3 tablespoons Oil
3 table spoons fresh mint leaves, chopped finely
1/4th cup cilantro or coriander leaves, chopped finely
