My daughter is turning 1 soon, does anybody know a good ice cream cake recipe? or a website that i could look at?

I want to bake her a ice cream cake, cux i dont like cakes & it will be just me and her on her birthday, my lil sis might be able to join us for her birthday.

INGREDIENTS
1 (10 inch tube pan) angel food cake
2 quarts strawberry ice cream, softened
4 cups confectioners' sugar
8 ounces cream cheese
1/2 pint fresh strawberries
DIRECTIONS
Slice prepared Angel Food cake in half horizontally. Spread softened strawberry ice cream on bottom layer. Put top layer on top the ice cream. Freeze cake for 45 minutes to an hour.
Mix cream cheese and confectioner's sugar until light and fluffy.
About 15 minutes before serving, remove cake from freezer and spread the cream cheese mixture over top and sides. Garnish with fresh strawberries.

At one years old, she's probably not going to appreciate your culinary skills at cake baking, but here are some thoughts:


1. Bake a pan of brownies, crumble and remove 1/2 of the mixture. Press into the bottom of a cake pan and frost with a cream cheese frosting. Chill and top with 1 -2 pints Cherry Garcia Ice cream. Smooth and press remaining brownie crumbles on top. Freeze until 30 minutes before serving time.
2. Bake a yellow cake mix in a jelly roll pan. Soften 1pint of
raspberry sorbe and spread on cooled cake. Freeze until firm. Top with 1 pint of softened vanilla ice cream. Moving quickly, roll up jelly roll style and wrap in wax paper. Freeze until firm. When serving, sprinkle with powdered sugar and shaved chocolate.
3. Baskin and Robbins make the best!

Family Circle magazine had this recipe. Look really good & easy:

Ice-Cream Cake
We love a stripe of mint chocolate chip in the center, but feel free to substitute chocolate, strawberry, any flavor you like.

Makes: 10 servings. Prep: 20 minutes. Freeze: 5 hours or overnight.


1 box (1 pound) individually wrapped chocolate creme-filled cakes (8 per package) such as Suzy Q's

2 cups (1 pint) mint chocolate chip ice cream OR: your favorite flavor

1/2 teaspoon mint extract, if using mint ice cream

2 cups frozen nondairy whipped topping, thawed


Line 8 1/2 x 4 1/2 x 2 5/8-inch loaf pan with plastic wrap, with plastic overhanging edges. Remove wrapping from 8 cakes. Press 4 cakes into bottom of pan, so the long sides of the individual cakes are parallel with short end of loaf pan.

Place loaf pan in freezer while softening ice cream. Let ice cream stand at room temperature for 10 minutes, stirring until consistency of cream cheese. Once ice cream is thickly spreadable, remove pan from freezer. Spread ice cream over top of cakes and to edges of pan.

Press remaining 4 cakes gently on top of ice cream, arranging in same manner as first layer. Tightly cover top of cake with overhanging plastic wrap. Freeze until fairly firm, about 3 hours.

Fold mint extract, if using, into thawed whipped topping. Once cake feels firm to touch, uncover top of cake. Invert onto platter; remove pan and plastic wrap. Frost sides and top of cake with thawed whipped topping.

Refreeze for at least 2 hours or overnight. Thinly slice and serve.
