I'd keep the salad simple. Maybe some mixed greens with a light vinaigrette. Potato soup is heavy and a little creamy, so something a little acidic would offset it and pair nicely with the chicken. You might even go for an apple/walnut salad with a raspberry vinaigrette (Greens, chopped apples, chopped walnuts, olive oil and a splash of raspberry vinegar) . it would balance the heavy creamy potato, the denseness of the chicken sandwiches and provide a little sweetness. Personally, I'd forget the sandwiches, throw the grilled chicken in the salad, and serve some crusty whole grain rolls warm from the oven. But either way, it sounds like a great menu. What time are we eating?

Cheese and chicken? What a waste of a good cheese, especially a strong mature cheddar. Try your chicken sandwich with a little mayonnaise sprinkled with a good dash of oregano. Delicious.
