One way or another, approach her. Maybe she'll be interested, but even if she's not I'd rather know once and for all than spend years thinking what if. Buena suerte!
UPDATE: Note the women above me aren't very encouraging about going the note-writing route. I was gonna say I didn't think it was the best way to go either, but now you have it from the experts.

Notes are useless. There is no warmth in a note and they're corny. Sorry but its true. When I was in school I hated it when guys wrote notes instead of talking to me. It meant they were either scared, joking or ashamed. None of which is attractive.
Strum up the courage to talk to her. If its only for a few minutes. Just talk to her. You'll feel sooooo proud of yourself. And it'll increase your self confidence, so it'll be even easier to talk to her next time.
She'll totally like you because you think she's awesome. Just know that and go for it.

Save the environment and screw the paper note. Girls like guys that can come out and just talk to them. First of all, you should ask her her name and get to know her before you ask her out because that will be pretty awkward - and a girl would either think "what the heck, i don't even know you?" or "dude this guy freaks me out...". so yeah... get to know her and see her as often at Quizznos and better friends= better chances you guys will go out! If you really like her, then you should start with your feet and just go up to her!

Yes! Write her a note if you get tongue-tied in person. But don't pour your heart out in it... That comes off as weird and stalker-ish.
Just a quick " Hi, I like you and was hoping we could chat. But I can see you're really busy with work." write your phone number on the note, and give it to her with a smile. The next move is hers.

Just talk to her, the problem with notes are that... you end up waiting for weeks for her to reply and if she decides to toss it... you'd may be waiting a lot longer before you dig up enough courage to ask why she hadn't given you a call.

first thing is, the guys gota know her real well, if they dont know eachother well, i would advice the guy to get to know her first then, you must hang out, and ask her. if you know her very well, i dont see why you shouldnt ask her out!
