I would like to select large portions of text, but when I reach the end of a page, the selection speeds up and reaches the end of (a 20 page) document in less than a second.

The speed is directly proportionate to how far down your mouse is. To reduce the speed, you can move it up just slightly.
A better solution might be to place the cursor where the text you want to select begins, and using the scroll bar, finding the end of the text area, hold down the shift key, and click just after the text. It will select everything inbetween, and the scroll bar allows you more precise control.
